this quiche is a perfect dish for diabetics.





BROCCOLI, POTATO AND BACON QUICHE





1 bag (19 oz) frozen roasted potatoes with broccoli and cheese sauce





1 deep-dish pastry shell





4 eggs OR 1 cup egg substitute





2/3 cup lite whipping cream





7 slices bacon, cooked, drained, crumbled





1 cup finely shredded Parmesan cheese





1 cup finely shredded low-fat cheddar cheese





1/2 tsp dried basil





1/4 tsp garlic powder





1/2 tsp freshly ground black pepper





1/4 tsp parsley flakes





1 tsp finely chopped fresh chives





Preheat oven to 350 degrees. Microwave vegetables as directed on package. In a large mixing bowl, beat eggs and whipping cream together with a wire whisk until well blended. Stir in cooked vegetables along with the other ingredients except chives. Pour into pastry shell and spread evenly. Sprinkle chives over top. Bake 30-40 minutes or until edge of filling is light golden brown and knife inserted in center comes out clean. Let stand 5 minutes before cutting.

2 cups small broccoli florets


1 cup reduced fat Swiss cheese, shredded


1 cup cubed cooked chicken


1/2 cup egg substitute


1 cup fat-free half %26amp; half





Preheat oven to 350掳F. Place broccoli in a sprayed 9-inch pie dish; add cheese and chicken.





Combine egg substitute and half %26amp; half until well mixed. Pour over chicken mixture, pressing down to cover ingredients as much as possible.





Bake 30 to 40 minutes or until custard is set. Let stand 5 to 10 minutes before serving

DiabeticBroccoli Quiche





1 (9 inch) pie crust


1 cup chopped broccoli


1/2 chopped onion


1/2 chopped mushrooms


2 whole eggs


2 egg whites


1 tsp. parsley


1/4 tsp.black pepper


1/4 tsp.salt


3/4 cup non-fat milk


3/4 cup low-fat Swiss or Mozzarella cheese, grated 2 Tbs. flour


oven to 400潞. Bake pie crust for 5 mins. Remove from oven and set


aside Decrease oven temp to 350潞 Combine whole eggs and egg whites and


beat together. Add chopped broccoli, onions, mushrooms, salt, pepper,


and parsley. stir together gently. Add milk cheese, and flour. Stir well


so no clumps form. Pour egg mixture into warm pie crust. Bake 35-40 mins


or until knife inserted in center comes out clean. Exchange = 1 meat,1

Just type in Diabetic Recipes and look through the ones that seem interesting. I personally love this site and find it awesome to use. It gives nutrition facts, serving sizes, and step-by-step directions. You can also type in the serving size you want and it will tell you what item amounts you need to change from the original recipe. If you read in metric, you can change the reading setting. This site is so useful.

If it's a savoury quiche, avoid high Gi foods, such as sweetcorn, and include vegetables. For the pastry, try using your favorite recipe, but substitute half the white flour for whole wheat (wholemeal). Avoid adding too much cheese - sprinkle with cheese to give a nice brown topping, when cooked.
