Help! I need a new quiche recipe?

I am looking for a basic Quiche receipe, i had one that was passed down from my mum but no matter what i cant get to work, it never firms and always turns out a little runny.





I just want a basic Quiche Lorraine receipe, i know the ingredients-Cheese,egg,bacon,onion,corn,鈥?cream and puff pastry, salt and pepper to taste.





I just dont know measuremants and what temp to cook on, does anyone have a recipe with these ingredients or a similar one?Help! I need a new quiche recipe?
QUICHE LORRAINE





1 1/2 c. light cream


4 eggs


1/2 tsp. salt


Dash pepper


8 oz. shredded Swiss cheese


2 tbsp. flour


8 slices crisply cooked bacon (crumbled)


1/4 lb. boiled ham (chopped)


1 (9 inch) unbaked pie shell





Heat oven to 350 degrees. Combine cream, eggs and seasonings; mix well. Toss cheese with flour; add cheese mixture, bacon and ham to egg mixture. Pour into pastry shell. Bake for 40-45 minutes or until knife inserted in center comes out clean.Help! I need a new quiche recipe?
Sure do. This is from my Joy of Cooking cookbook and I use it every year at Christmas.





QUICHE LORRAINE





Preheat oven to 375潞. Prepare a 9'; pie shell of a Pate Brisee or pie crust. Brush with the white of an egg and prick it well. Slice in 1'; lengths, 1/4 lb sliced bacon. Cook the bacon in a heavy skillet, stirring constantly until the fat is almost rendered out. But the bacon is not yet crisp. Drain on absorbent toweling. Scald to hasten the cooking time 2 cups milk or cream. Cool slightly, then beat together with 3 whole eggs, 1/4 tsp salt, 1/8 tsp white pepper, a fresh grating of nutmeg, 1 tsp chopped chives. Sprinkle in the bottom of the pie shell the bacon and add 1/2 c diced Swiss cheese. Pour the custard mixture over it. Bake 35 to 40 minutes or until the top is a golden brown and a knife tests clean.





Hope that helps. I put diced ham, and more bacon in mine.

1 (9 inch) pie crust


1 med. onion, chopped


8 slices of cooked bacon, crumbled


1/2 pkg. frozen chopped broccoli, cooked


4 oz. shredded Swiss cheese


1/2 pt. all-purpose cream or whipping cream


2 eggs


1/4 tsp. sugar


3/4 tsp. salt





Sprinkle bacon, cheese, onion, broccoli in pie plate. With beater blend eggs, cream, salt and sugar. Pour into pie crust. Now bake at 350 degrees for 1 hour. It is done when knife inserted from edge comes out clean.





OR





QUICHE LORRAINE





1 (9 inch) unbaked pie shell (I use Pillsbury refrigerated crusts)


2 tbsp. butter


1 med. onion, diced


12 to 14 slices bacon (or equivalent ham)


4 eggs


2 c. half %26amp; half (or part half %26amp; half - part milk)


3/4 tsp. salt


Pinch of nutmeg


Pinch of cayenne pepper


1/8 tsp. pepper


1 c. grated Swiss cheese (I use half Swiss - half Cheddar)





Saute onions in butter until soft but not brown. Fry bacon until crisp. Drain and break into small pieces. Combine eggs, cream, salt, nutmeg, cayenne and pepper. Beat until well mixed. Sprinkle pie shell with bacon. Spread onions over bacon. Cover with grated cheese. Pour egg mixture in carefully. Bake at 425 degrees for 15 minutes, then reduce heat to 300 degrees and bake 40 minutes or until knife inserted into center comes out clean.





OR





QUICHE LORRAINE





1 can French onion rings


4 eggs


2 c. milk


1 tsp. salt


A dash of pepper


1 c. grated Cheddar cheese


1 unbaked pastry shell





Beat eggs. Add milk, cheese and onion rings. Bake 425 degrees 15 minutes; reduce temperature to 350 degrees. Bake 15 minutes until set.
