Cheesy Asparagus Flan
This asparagus flan recipe is delicious hot or cold and makes a great centre piece for a picnic.
Ingredients
Serves 4
Enough shortcrust pastry to line an 8 inch flan dish
150 ml double cream
2 eggs
100g Cheddar cheese
100g Red Leicester or similar cheese
200g green asparagus
Handful fresh parsley or chives, chopped
1 teaspoon Dijon-style mustard
Method
Pre-heat the oven to 190 C / Gas Mark 5 / 375 F. Roll out the pastry and line an 8 inch flan tin.
If you want, you can bake it blind. Cover pastry with a sheet of grease-proof paper and then fill with baking beads or equivalent. Bake for 15 minutes.
Wash the asparagus thoroughly to remove any grit and chop into 5cm chunks.
Steam lightly for 5 minutes, then drain well.
Grate the cheeses.
Beat together the cream and the eggs. Add the herbs, salt and pepper, with the mustard (if using).
Put half of each cheese into the cream mixture.
Arrange the asparagus spears in the flan dish and pour the cream mixture on top. Sprinkle the remaining cheese on top.
Bake for about 35 minutes (this depends on your oven), until the egg mixture is risen and set.

Quiche:- Crab
1 pastry shell (9 inch), partially baked
1 tablespoon butter
2 tablespoons shallots, minced
1 cup crab-meat
1 tablespoon flour
1 1/2 cups Swiss cheese, shredded/divided
3 eggs
1 cup half and half
1/2 teaspoon salt
dash white pepper or hot pepper sauce
dash nutmeg
minced parsley
Have a 9-inch pastry shell partially baked. Saute shallots in butter until tender, about 2 minutes; mix with crab-meat and flour; set aside. Sprinkle 3/4 cup the cheese in the pie shell, then spread with crab mixture. Sprinkle with remaining 3/4 cup of cheese. Beat eggs, cream, salt, pepper, nutmeg, and parsley until mixed. Pour into shell. Bake for 25 to 30 minutes at 350 degrees.

SIMPLE FLAN
In a 9x9'; baking pan, melt on medium heat 1 cup of sugar on the stove top, stirring constantly with a wooden spoon. Once sugar is fully melted (it should have a caramel color), set it aside to cool on a level surface.
While sugar cools, mix one can of sweetened-condensed milk with one can of water 1tsp vanilla %26amp; 2 grinds of nutmeg. Add 4 large eggs and beat until smooth. Preheat oven to 350. Add mixture to cooled pan with caramelized sugar. Place 9x9 pan into a larger baking pan filled with about 1'; of water (called a ';Ba帽o Mar铆a'; in Spanish, don麓t know the English word) and place in preheated oven for about 45 minutes or until a knife inserted into the center comes out clean. Let cool in refrigerator and turn onto a plate. The sugar should come out as syrup onto the baked flan.
This is how I make cheese and onion quiche:
Pastry:
I am lazy and buy it ready made! I used to make it but I can't remember the recipe.
Filling:
Enough sliced onion to cover the bottom of the pastry case.
Lots of different grated cheese on top to fill it about half full.
2 eggs + 100ml of milk beaten together with salt, pepper and a little mustard powder and any other herbs you like and feel like chucking in.
Pour over the top and cook in the oven at about 180 'C for 25 - 35 minutes until all the egg has cooked and the pastry is coming away from the edge.
I also make that using less onion and adding courgette, peppers, spinach, broccoli etc to make a cheese and vege quiche.

* 10 egg yolks
* 1 (14 ounce) can sweetened condensed milk
* 1 (12 ounce) can evaporated milk
* 3 tablespoons margarine
* 3 tablespoons brown sugar
DIRECTIONS
1. Whisk together the yolks, condensed milk, and evaporated milk; set aside. Melt margarine in a small saucepan over medium heat. Stir in the brown sugar; keep stirring until the brown sugar has dissolved, and is smooth. Evenly spread the sugar over the bottom of a pie plate, then pour in the custard. Cover with foil. (See note at bottom.)
2. Fill a large pot approximately 3/4 full with water and bring to a simmer on the stove. Place the pie plate over the simmering water and cook for 65 to 70 minutes, until flan has set. Remove flan from the boiling water and allow to cool for at least 30 minutes.
3. To serve, loosen the flan from the pie plate by running a knife around the edges; invert onto a serving plate. Serve at room temperature or cold

DIRECTIONS BAKED FLAN
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a small nonstick saucepan, heat the sugar over medium heat. Shake and swirl occasionally to distribute sugar until it is dissolved and begins to brown. Lift the pan over the heat source (4 to 6 inches) and continue to brown the sugar until it becomes a dark golden brown. You may slightly stir while cooking, but continually stirring causes the sugar to crystallize. Pour caramelized sugar into a 1 1/2 quart casserole dish or a large loaf pan, and swirl to coat the bottom of the pan evenly.
3. In a blender, combine sweetened condensed milk, cream, milk, eggs and vanilla. Blend on high for one minute. Pour over the caramelized sugar.
4. Place the filled casserole dish into a larger pan and add 1 inch of HOT water to the outer pan. Bake in preheated oven for 50 to 60 minutes, or until set.
I cheat and buy a frozen 9'; pie crust. Chop a small onion and a handful of baby bella mushrooms (or creaminis, whatever) and saute in 2tbsp butter until soft. Put the frozen crust in the oven on 325 for 10 mins first, then take out, spread onion-mushroom mixture on bottom. Then put in two cups of shredded cheddar (or swiss or gruyere...whatever you prefer) then beat 3 large eggs with 2tbsp cream or milk and pour on top of cheese mixture, then sprinkle with bacon bits and parsley (or chopped up ham or even some leftover broccoli or spinachthat is cooked and soft) Bake for 15 mins at 400, then reduce heat to 325 and wrap a bit of foil just around the crust so it doesn't burn and bake another 25 mins or so until knife inserted in center comes out clean.
