Quiche

Prep: 25 minutes

Bake: 52 minutes

Ingredients

1 recipe Pastry for Single-Crust Pie or 1/2 of a 15-ounce package rolled refrigerated unbaked pie crust (1 pie crust)

4 eggs, lightly beaten

1-1/2 cups half-and-half, light cream, or milk

1/4 cup sliced green onions

1/4 teaspoon salt

1/8 teaspoon black pepper

Dash ground nutmeg

3/4 cup chopped cooked ham, chicken, or crabmeat (about 3 1/2 ounces)

1-1/2 cups shredded Swiss, cheddar, Monterey Jack, and/or Havarti cheese (6 ounces)

1 tablespoon all-purpose flour

Directions

1. Prepare and roll out Pastry for Single-Crust Pie or unroll refrigerated pie crust according to package directions. Line a 9-inch pie plate with pastry. Trim; crimp edge as desired. Line unpricked pastry with a double thickness of foil. Bake in a 450 degree F for 8 minutes. Remove foil. Bake for 4 to 5 minutes more or until pastry is set and dry. Remove from oven. Reduce oven temperature to 325 degrees F.

2. Meanwhile, in medium bowl stir together eggs, half-and-half, green onions, salt, pepper, and nutmeg. Stir in ham. In a small bowl toss together the cheese and flour. Add to egg mixture; mix well.

3. Pour egg mixture into hot, baked pastry shell. Bake in the 325 degree Foven for 40 to 45 minutes or until knife inserted near center comes out clean. Let stand 10 minutes before serving. Makes 6 servings.

4. Lower Fat Quiche: Prepare as above, except substitute Oil Pastry for the Pastry for Single-Crust Pie. Substitute 1 cup refrigerated or frozen egg product, thawed, for the eggs, fat-free milk for the cream, and use reduced-fat cheddar,
INGREDIENTS

2 cups milk

4 eggs

3/4 cup biscuit baking mix

1/4 cup butter, softened

1 cup grated Parmesan cheese

1 (10 ounce) package chopped frozen broccoli, thawed and drained

1 cup cubed cooked ham

8 ounces shredded Cheddar cheese

DIRECTIONS

Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 10 inch quiche dish.

In a large bowl, beat together milk, eggs, baking mix, butter and parmesan cheese. Batter will be lumpy. Stir in broccoli, ham and Cheddar cheese. Pour into prepared quiche dish.

Bake in preheated oven for 50 minutes, until eggs are set and top is golden brown.
Make pastry the normal way beat up 3 eggs 4 oz cheese grated sliced onions and tomatoes first whisk up the eggs then add your grated cheese and sliced onions put it in the pastry case and then add sliced tomato on top and bake it until the egg is set.
Yep...2 prepared pie shells, I like the roll out kind but you can use the other...

Pre heat the oven 400

SPRAY with Pan to keep from soaking thru the shell.

Into the shell...tear up 4 slices ea of process American and swiss cheeses.

If you want meat use cooked crumbled sausage or bacon, I got this recipe from a lady who 30 years ago told me the cheapest and most flavorful way to flavor a quiche...use (yuck) potted meat. It is really incredible for flavoring and people go wild for it with out knowing what it is. Use two Tablespoon fulls spread out like dropping mini cookies into the shell.

Beat 1 dz eggs, add 1 can evaporated milk, 1/2 can water. 1/4 t salt, 3-4 shakes pepper, 1/8 t cayenne, 1/2 t nutmeg, 1/2 t dry mustard. Sound weird, I know but trust me....My Sunday School class will not let me bring any thing else to class when we have breakfast.

Divide by pouring into the shells.

Place in oven and bake 15 minutes and then turn temp to 325 for 30-45 minutes. They should just be solid, when a knife inserted comes out clean. The tops are golden and look slightly expanded. Remove and cool slightly before eating.

The custard is basic and can be changed with the addition of any ingredients, sliced tomatos and onions, or spinach, chicken, ham, etc!

Good luck
buy a ready made pie crust.....

4 eggs,3/4 cups milk...1/2 tsp salt 1/4 tsp pepper blend very well

My favorite is with cheddar and green onion...but you can put most anything you like.....the meats you add should be cooked though.

fill the crust no more than half full with your ingredients, pour in egg mixture.bake at 350 of 20 mins or so....

This is my favorite! I'm not a big fan of the crust so this is a nice change.

Impossible Broccoli Pie

1 (12 ounce) bag frozen broccoli florets, thawed

1/4 cup of chopped onions

1 cup shredded cheddar cheese

2 eggs

1/2 cup bisquik biscuit mix

3/4 cup milk

1 dash pepper

--Thaw broccoli crowns in a 9 inch pie plate, layer with onions and then cheese. In a large bowl, combine eggs, milk, Bisquix and pepper, beat together well. Pour mixture over broccoli in a spiral motion (otherwise it may take too long to cook in the middle). Bake for 25-35 minutes at 400F (a knife poked into the middle should come out clean).
