I am craving a qreat quiche and I love to cook anyway. This lady who owned a tearoom nearby, served it there. The retail store that helped run it, closed down. I was a faithful customer and she almost told me her recipe one day because I told her how much I loved it and never had such a good quiche. I do know she uses half and half. I am begging for a great ham and spinach recipes.Anyone know of a Ham and spinach quiche recipe?
Just use a cup of H%26amp;H for each egg. A typical pie shell takes about 4 cups H%26amp;H + 4 eggs. Add S%26amp;P to taste. Then add your frozen chopped spinach, thawed adn squeezed dry, and a couple handsful of chopped ham. Pour into shell and bake at 325潞F for about an hour, or until center is set. You may need to cover crust edge w/ foil or protector about half-way thru baking to prevent overcooking that portion.Anyone know of a Ham and spinach quiche recipe?
6 large eggs, beaten
2 cups heavy cream
Salt and pepper
1 cups chopped fresh baby spinach, packed
1 pound bacon, cooked and crumbled --use ham
2 cups shredded Swiss cheese
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate
Preheat the oven to 375 degrees F.
Combine the eggs, cream, salt, and pepper in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set

You will need:

cooked ham, spinach
2 cups of cheddar cheese
2 teaspoons minced onion
4 eggs
2 cups half and half cream
1/2 teaspoon salt
1/4 teaspoon pepper
Bake the shell for 5 to 10 minutes at 400 degrees remove
put the ham, cheese, spinach in the shell
in a bowl, whisk eggs, cream,salt, and pepper, pour into shell and bake at 400 degrees for 35-40 minutes or until a knife inserted in the near the center comes out clean. Let stand for 5-10 minutes before cutting.

Perfect for brunch. This recipe makes two 9 inch quiches.
6-8 oz. fresh baby spinach
1 (8oz.) container sour cream
2 pie crusts
4 tablespoons olive oil
1 small onion finely diced
8 oz. mushrooms finely diced
2 cups finely diced ham
10 oz. shredded Monterey Jack cheese
8 oz. shredded cheddar cheese
8 eggs
2 cups half and half
Salt and freshly ground pepper
Preheat oven to 375掳
Heat olive oil over medium-high heat and saut茅 onions until soft and translucent, stir in mushrooms; cook for 2 minutes or until soft; stir in ham, remove from heat.
In a large bowl, combine spinach, sour cream, and salt and pepper to taste. Divide in half and spread into 2 pie crusts. Top with ham and mushroom mixture.
Mix Monterey Jack and cheddar cheeses and sprinkle evenly over each pie. Whisk together the eggs, half and half, and salt and pepper and pour evenly over pies.
Place pies on baking sheet on middle shelf in preheated oven for 40 minutes or until browned.

1 Pie crust shell, 9 inch, unbaked

1/2 tsp. Butter or cooking oil

2/3 cup Smoked ham, diced
鈥?br>
2/3 cup Mushrooms, sliced

1/4 cup Onion, finely diced
鈥?br>
2 cups (packed) Spinach leaves, torn

1 tsp. Parsley, minced

1/2 cup Cheddar cheese, shredded

1/2 cup Monterrey Jack cheese, shredded
鈥?br>
1/2 cup Swiss cheese, shredded
Custard

4 each Eggs

1 cup Cream

pinch Ground nutmeg
鈥?br>
1/4 tsp. Salt
鈥?br>
1/8 tsp. Fresh ground black pepper
Method
Preheat oven to 350-375 degrees F. Cook onions and mushrooms, until tender. Add ham and spinach, cook until spinach wilts. Season with salt adn pepper. Remove from heat and cool. Prepare custard by combining eggs, cream, nutmeg, salt and pepper in a bowl, mix thoroughly. Place cooked ham and spinach mixture in pie shell and spread evenly. Top with cheeses. Pour in custard and gently tap quiche on work surface to remove ';air pockets.';
Bake at 350 - 375 degrees F for 45鈥?5 minutes or until golden brown and cooked through. Test by piercing with a small knife. If knife comes out clean, the quiche is done. Cool quiche for 15-20 minutes before slicing.
Makes 1 quiche (8-10 servings)
