Quiche Lorraine





1 unbaked pie crust


12 slices bacon, fried crisp and crumbled


1 cup shredded Swiss cheese


鈪?cup minced onion


4 whole eggs


2 cups whipping cream or half-and-half


戮 t salt


录 t sugar


鈪?t cayenne pepper





Heat oven to 425掳. Sprinkle bacon, cheese and onion evenly in pie crust. Beat remaining ingredients together. Pour over onion, bacon and cheese. Bake 15 minutes at 425掳, reduce to 300掳 and bake 30 minutes longer. Let stand for 5 鈥?10 minutes before cutting.Looking for some great quiche recipes.?
Cheese and Sausage Quiche


Cheese and sausage quiche recipe, made with eggs, sausage, and two cheeses. Scroll down to see more quiche recipes.


INGREDIENTS:


1 prepared pie shell, 9-inch


8 ounces bulk pork sausage


4 hard-cooked eggs, sliced


4 ounces shredded Swiss cheese


4 ounces Cheddar cheese


3 eggs


1 1/4 cups milk or half-and-half


1/2 teaspoon salt


1/8 teaspoon pepper


PREPARATION:


Bake pie shell in a preheated 350掳 oven for 7 minutes.


In a skillet, brown the sausage over medium heat, breaking up and turning. Drain well. Arrange sliced eggs in the bottom of the cooled crust; top with the drained browned sausage and shredded cheeses. In a bowl, whisk together the 3 eggs, milk, salt, and pepper. Pour egg mixture over sausage and cheese mixture. Bake quiche at 350掳 for 30 to 35 minutes, or until a knife inserted in center comes out clean. Let stand for 8 to 10 minutes before serving.

my mother makes a LOVELY fruit quiche! just take a plain, ordinary quiche recipe but instead of adding cheeses and bacon, herbs, and veggies, add fruit! i know, sounds kinda gross, but she made it for easter brunch a few years back, and i've been hooked since!

Pizza Quiche








Ingredients





* 1-1/4 cup all-purpose flour


* 1/4 teaspoon salt


* 1/3 cup shortening


* 3 to 4 tablespoons cold water


* 1 cup shredded mozzarella cheese (4 ounces)


* 1/2 cup shredded cheddar cheese (2 ounces)


* 1 tablespoon all-purpose flour


* 3 beaten eggs


* 1-1/2 cups milk


* 1/2 cup chopped pepperoni or Canadian-style bacon


* 1 2-1/2-ounce jar sliced mushrooms, drained or 1/4 cup sliced pitted ripe olives


* 1/2 teaspoon dried oregano, crushed


* 1 8-ounce can pizza sauce





Directions





1. In a large mixing bowl combine 1 1/4 cups flour and salt. Cut in shortening until pieces are the size of small peas. Sprinkle cold water, 1 tablespoon at a time, over mixture, tossing with a fork after each addition until all is moistened. Form dough into a ball. On a lightly floured surface, flatten dough with hands. Roll dough from center to edges, forming a circle about 12 inches in diameter.





2. Ease pastry into a 10-inch tart pan with a removable bottom or a 10-inch quiche dish. Press pastry into fluted sides of tart pan or quiche dish and trim edges. Line the unpricked pastry shell with a double thickness of foil. Bake in a 450 degree F oven for 8 minutes. Remove the foil. Bake for 4 to 5 minutes more or until pastry is set and dry. Remove pastry from oven. Reduce oven temperature to 325 degree F.





3. In a medium mixing bowl toss together mozzarella cheese, cheddar cheese, and 1 tablespoon flour. Sprinkle cheese mixture over bottom of hot pastry shell. In a large mixing bowl stir together eggs, milk, pepperoni, mushrooms or olives, and oregano. Carefully pour egg mixture into pastry shell.





4. Bake in a 325 degree F oven for 35 to 40 minutes or until a knife inserted near the center comes out clean. Let stand 10 minutes before serving. Meanwhile, heat the pizza sauce in small saucepan over medium heat. Serve quiche with pizza sauce. Makes 6 servings.
