Bacon and Cheddar Quiche
This quiche could be served for brunch or lunch, along with mixed fresh fruit or a tossed salad. Use prepared pie pastry or a frozen thawed pie shell if you need to cut time.
INGREDIENTS:
* 1 1/3 cups all-purpose flour
* 1/8 teaspoon salt
* 1/2 cup cold butter, cut in small pieces
* 2 to 3 tablespoons ice-cold water

* 8 strips lean bacon, cooked and crumbled
* 4 large eggs
* 1 1/2 cups half-and-half or whole milk
* 1/4 teaspoon dried leaf thyme
* 1/8 teaspoon pepper
* 1 cup shredded sharp Cheddar cheese
PREPARATION:
Prepare crust for quiche. In a mixing bowl, mix together flour and salt. Cut in cold butter with a pastry blender until coarse crumbs form; add water, a little at a time, until dough holds together and forms a ball.
Shape into a disk, wrap in plastic wrap, and refrigerate for about 30 minutes.
On a lightly floured surface with a floured rolling pin, roll out dough into a circle about 11 inches in diameter. Fit dough into a 9-inch pie plate or quiche pan. Trim edges, leaving a little overhang, about 1/4-inch all around the edge. Prick dough with a fork. Line with foil and fill with dried beans or pie weights. Bake quiche crust for 10 minutes at 375掳.
In a small bowl, whisk together the eggs, milk, thyme, and pepper. Pour into the baked crust. Crumble bacon over the top with the shredded Cheddar cheese. Bake at 375掳 for about 30 minutes, or until quiche filling is set and top is lightly browned. Serve the quiche with fresh tomato wedges or a tossed salad.
Quiche serves 8.

Quiche lorraine

For the pastry
175g/6oz plain flour, plus extra for dusting
salt
75g/2戮oz butter, plus extra for greasing
(alternatively use ready made pastry)
For the filling
250g/9oz English cheddar, grated
4 tomatoes, sliced (optional)
200g/7oz bacon, chopped
5 eggs, beaten
100ml/3陆fl oz milk
200ml/7fl oz double cream
salt
freshly ground black pepper
2 sprigs of fresh thyme
Method
1. To make the pastry, sift the flour together with a pinch of salt in a large bowl. Rub in the butter until you have a soft breadcrumb texture. Add enough cold water to make the crumb mixture come together to form a firm dough, and then rest it in the fridge for 30 minutes.
2. Roll out the pastry on a light floured surface and line a 22cm/8陆inch well-buttered flan dish. Don't cut off the edges of the pastry yet. Chill again.
3. Preheat the oven to 190C/375F/Gas 5.
4. Remove the pastry case from the fridge and line the base of the pastry with baking parchment and then fill it with baking beans. Place on a baking tray and bake blind for 20 minutes. Remove the beans and parchment and return to the oven for another five minutes to cook the base
5. Reduce the temperature of the oven to 160C/325F/Gas 3.
6. Sprinkle the cheese into the pastry base and add the sliced tomatoes if you are using them. Fry the bacon pieces until crisp and sprinkle over them over the top.
7. Combine the eggs with the milk and cream in a bowl and season well. Pour over the bacon and cheese. Sprinkle the thyme over the top and trim the edges of the pastry.
8. Bake for 30-40 minutes or until set. Remove from the oven and allow to cool and set further.
9. Trim the pastry edges to get a perfect edge and then serve in wedges.

Mexican Quiche

Ingredients
* 1 6-inch flour tortilla
* 1/2 cup shredded Monterey Jack cheese (2 ounces)
* 3 ounces bulk pork sausage
* 1 tablespoon chopped green sweet pepper
* 1 egg
* 1/4 cup milk, light cream or half and half
* 1/8 teaspoon salt
* Salsa (optional)
* Fresh cilantro (optional)
Directions
1. Starting with a cold skillet, heat tortilla about 45 seconds or until warm, turning once. Place tortilla into a greased 15-ounce casserole. Top with 1/4 cup of the cheese.
2. In same skillet cook sausage and green pepper until sausage is cooked and green pepper is crisp-tender; drain well. Spoon over tortilla and cheese in casserole.
3. In a small bowl combine egg, milk or cream, and salt. Mix well. Pour egg mixture into casserole. Top with remaining cheese. Bake in a 350 degree F oven for 30 to 35 minutes or until firm. Hamburger Quiche - I know its not quite true quiche because it has hashbrowns in it, but it still tastes very good
1 lb ground beef (cooked and drained)
1 pkg shredded cheddar
1/2 C milk
minced onion
2 eggs
salt and pepper
1/2 C margarine(1 stick)
1 2lb pkg frozen hash browns(thawed)
Place hashbrowns in 13*9 pan, melt butter and drizzle evenly
Bake at 350 until browned (usually about 45 minutes)
mix remaining ingrediets (works easiest if you crack eggs stir them up real well, add spices, then add everything else)
Spread mixture over hashbrowns and stick back in the oven for another half hour

mix eggs a little milk, diced potatoes, peas, chives, cheese, and anything else you want in there.
scramble it all together and pour in between the crusts and bake

Once you've got the basic quiche (pastry crust and egg mixture) you can throw in just about anything. Kinda think of things that go well together and run with it. My favorite is cheddar cheese, diced chicken, and broccoli. You could also put in swiss, strips of beef, and fried potatoes. Quiches are fun cus you can stick anything in them, just like an omelet.
