Quick Quiche





INGREDIENTS:


8 slices bacon


4 ounces shredded Swiss cheese


2 tablespoons butter, melted


4 eggs, beaten


1/4 cup finely chopped onion


1 teaspoon salt


1/2 cup all-purpose flour


1 1/2 cups milk





DIRECTIONS:


Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.





Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.





Line bottom of pie plate with cheese and crumbled bacon. Combine eggs, butter, onion, salt, flour and milk; whisk together until smooth; pour into pie pan.





Bake in preheated oven for 35 minutes, until set. Serve hot or cold.








Crab and Swiss Quiche





INGREDIENTS:


2 egg, lightly beaten


1/2 cup milk


1/2 cup mayonnaise


1 teaspoon cornstarch


1/2 pound imitation crab meat, flaked


1 1/2 cups shredded Swiss cheese


1 (9 inch) unbaked pie crust





DIRECTIONS:


Preheat oven to 350 degrees F (175 degrees C).





In a medium bowl, mix together eggs, milk, mayonnaise and cornstarch. Mix in the imitation crab and Swiss cheese. Pour into pie shell.





Bake in preheated oven until a knife inserted into center of the quiche comes out clean, about 30 to 40 minutes.








Carrot Cashew Quiche





INGREDIENTS:


1/2 cup butter


1 cup sliced carrots


1 cup cashews


1/2 cup honey


3 eggs


1 1/2 cups heavy cream


1/2 teaspoon nutmeg


1/2 teaspoon salt


3/4 cup shredded Cheddar cheese


1 (9 inch) pie crust





DIRECTIONS:


Preheat oven to 350 degrees F (175 degrees C).





Melt the butter in a skillet over medium heat. Stir in the carrots and cashews, and cook until carrots are tender and cashews are golden brown. Mix in the honey.





In a bowl, beat together the eggs, heavy cream, nutmeg, and salt.





Evenly spread the cheese in the bottom of the pie crust. Layer the carrot mixture over the cheese, and top with the egg mixture.





Bake 40 minutes in the preheated oven, until a toothpick inserted in the center comes out clean.








Crab Quiche





INGREDIENTS:


1 (9 inch) deep dish frozen pie crust


4 eggs


1 cup heavy cream


1/2 teaspoon salt


1/2 teaspoon black pepper


3 dashes hot pepper sauce (e.g. Tabasco™), or to taste


1 cup shredded Monterey Jack cheese


1/4 cup grated Parmesan cheese


1 (8 ounce) package imitation crabmeat, flaked


1 green onion, chopped





DIRECTIONS:


Preheat the oven to 350 degrees F (175 degrees C). Bake the pie crust for about 10 minutes, until just starting to brown.





Remove from the oven, and allow to cool.





In a large bowl, whisk together the eggs, cream, salt, pepper, and hot sauce. Stir in shredded cheese, onion and imitation crab.





Pour into the pie shell.





Bake for 25 to 30 minutes in the preheated oven, then turn off the oven, but leave the door closed. Leave quiche in the oven for an additional 20 to 30 minutes until firm. This will give it a smoother texture.








Easy Mini Quiches





INGREDIENTS:


6 slices bacon, chopped


1 onion, chopped


3 eggs


3/4 cup buttermilk baking mix


1 1/2 tablespoons chopped fresh parsley


2 cups shredded American cheese





DIRECTIONS:


Preheat the oven to 350 degrees F (175 degrees C). Grease 2 mini muffin pans. In a large skillet over medium heat, fry bacon and onion together for about 5 minutes, or until bacon is crisp. Drain and set aside.





In a medium bowl, beat the eggs. Stir in the baking mix, parsley, shredded cheese, bacon and onion. Spoon into greased muffin cups.





Bake for 10 to 15 minutes in the preheated oven, or until the tops are lightly browned. Allow mini quiches to cool in the pan before carefully removing with a small knife or spatula.Any recipes for quiche???????

Everyone is asking for quiche recipes tonight. Here's mine, it's french.





Crust:


4 oz cream cheese


4 oz butter


1 cup flour





Filling:


3/4 cup cream


3 eggs


1/2 onion


4 slices bacon cooked


6 oz gruyere (or swiss) cheese





Blend crust ingredients well. Roll out and place in a pie pan.





Place onions bacon and cheese in crust. Mix eggs and cream and pour over the onions, bacon and cheese.





Bake at 350 degrees F for 30 - 35 minutes





If the pie plate is large add an extra egg and 1/4 cup of cream. I use half and half. Cream is so rich.
';Quiche Lorraine'; - 6 main/8 appetizer servings





9'; baked pie shell


12 slices bacon (about 1/2 lb.); crisply fried and crumbled


1 cup shredded natural Swiss cheese (about 4 oz.)


1/3 cup minced onion


4 eggs


2 cups whipping cream or light cream (20%)


3/4 tsp. salt


1/4 tsp. sugar


1/8 tsp. cayenne red pepper





Heat oven to 425*.


Sprinkle bacon, cheese and onion in pie shell. Beat eggs slightly; beat in remaining ingredients. Pour cream mixture into pie pan; bake 15 minutes.


Reduce oven temperature to 300* and bake 30 minutes longer or until knife inserted 1'; from edge comes out clean. Let stand 10 minutes before cutting. Serve in wedges.

Flaky Butter Crust, recipe follows


6 ounces thick cut bacon, cut into narrow strips (or “lardons”)


2 large eggs


2 large egg yolks


1 1/4 cups half-and-half


1/4 teaspoon salt


1/4 teaspoon ground white pepper


Pinch freshly grated nutmeg


1 cup grated Gruyere or Swiss


Simple Salad, recipe follows











On a lightly floured surface, roll out the dough to an 11-inch circle. Fit into a 9-inch fluted tart pan with a removable bottom and trim the edges. (Alternatively, a 9-inch pie pan can be used.) Refrigerate for at least 30 minutes.





Preheat the oven to 375 degrees F.





Line the pastry with parchment paper and fill with pie weights or dried beans. Bake until the crust is set, 12 to 14 minutes. Remove the paper and weights and bake until golden brown, 8 to 10 minutes. Remove from the oven and cool on a wire rack. Leave the oven on.





In a medium skillet, cook the bacon until crisp and the fat is rendered, about 5 minutes. Remove with a slotted spoon and drain on paper towels. Discard the fat or reserve for another use.





Arrange the bacon evenly over the bottom of the baked crust.





In a large bowl, beat the eggs, yolks, and half and half. Add the remaining ingredients and whisk to combine. Pour into the prepared crust and bake until the custard is golden, puffed, and set yet still slightly wiggly in the center, 30 to 35 minutes.





Remove from the oven and let cool on a wire rack for 15 minutes before serving. Serve with Simple Salad.








Flaky Butter Crust:


1 1/4 cups all-purpose flour


1/4 teaspoon salt


7 tablespoons unsalted butter, chilled and cut into pieces


1 to 2 tablespoons ice water, or more as needed





To make the dough in a food processor, combine the flour, salt, and butter in the processor and process until the mixture resembles coarse crumbs, about 10 seconds. With the machine running, add the ice water through the feed tube and pulse quickly 5 or 6 times, or until the dough comes together and starts to pull away from the sides of the container. Gather the dough into a ball, flatten it into a disk, and wrap in plastic wrap. Refrigerate for at least 1 hour.





To make the dough by hand, combine the flour, salt, and butter in a medium bowl, and mix with a pastry blender or your fingertips until the mixture resembles coarse crumbs. Add the water 1 tablespoon at a time and mix until the dough comes together and is no longer dry, being careful not to overmix. Form into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.





Roll out the dough on a lightly floured surface according to the recipe, fit it into the pan, and allow to rest again in the refrigerator before baking.





Yield: one 9-inch tart or pie crust








Simple Salad:


1/4 cup balsamic vinegar


2 teaspoons dark brown sugar, optional


1 tablespoon chopped garlic


1/2 teaspoon salt


1/2 teaspoon freshly ground black pepper


3/4 cup olive oil


Mesclun salad mix or favorite greens, for accompaniment





Beat the vinegar in a bowl with the sugar, garlic, salt and pepper until sugar and salt dissolves. Then beat in the oil by droplets, whisking constantly. (Or place all the ingredients in a screw-top jar and shake to combine.) Taste and adjust the seasonings.


Toss a few tablespoons of the dressing with the salad mix and serve immediately.


If not using dressing right away, cover and refrigerate, whisking or shaking again before use.

1/4 teaspoon white sugar


1/8 teaspoon cayenne pepper





DIRECTIONS


Preheat oven to 425 degrees F (220 degrees C).


Place bacon in a large skillet, and fry over medium-high heat until crisp. Drain on paper towels, then chop coarsely. Sprinkle bacon, cheese and onion into pastry shell.


In a medium bowl, whisk together eggs, cream, salt, sugar and cayenne pepper. Pour mixture into pastry shell.


Bake 15 minutes in the preheated oven. Reduce heat to 300 degrees F (150 degrees C), and bake an additional 30 minutes, or until a knife inserted 1 inch from edge comes out clean. Allow quiche to sit 10 minutes before cutting into wedges.

Mushroom Quiche Recipe





1- 9 inch unbaked pie crust


1/2 pound bacon ,cooked and crumbled


1/3 cup minced onion


3 eggs, slightly beaten


1 cup milk


1 1/2 cup shredded Cheddar cheese


1- 4 ounce can sliced mushrooms


2 tablespoons Worcestershire sauce





Preheat oven to 425 degrees.


Prick the bottom of the pie crust with a fork and bake for 5 minutes. Remove from the oven and reduce temperature to 350 degrees. In a large bowl, combine eggs, cheese, milk, bacon and mushrooms. Pour into the pie shell and bake for 40 minutes or until a knife comes out clean. Cool for 10 minutes.
Chicken-Pecan Quiche:





You'll love this delectable quiche with its creamy chicken-pecan filling and savory Cheddar crust.





1 cup all-purpose flour


1 cup (4 ounces) shredded sharp Cheddar cheese


3/4 cup chopped pecans


1/2 teaspoon salt


1/4 teaspoon paprika


1/3 cup vegetable oil


1 cup sour cream


1/2 cup chicken broth


1/4 cup mayonnaise


3 large eggs, lightly beaten


2 cups finely chopped cooked chicken


1/2 cup (2 ounces) shredded sharp Cheddar cheese


1/4 cup minced onion


3 drops of hot sauce


1/4 cup pecan halves





Combine first 5 ingredients in a medium bowl; stir well. Add oil; stir well. Firmly press mixture in bottom and up sides of a 9-inch deep-dish pieplate. Bake at 350° for 12 minutes. Cool completely.





Combine sour cream and next 3 ingredients; stir with a wire whisk until smooth. Stir in chicken, 1/2 cup cheese, onion, and hot sauce. Pour chicken mixture over prepared crust. Arrange pecan halves over chicken mixture. Bake at 350° for 55 minutes or until set. Let stand 10 minutes before serving.





Yield: 8 servings
QUICHE





Preheat Oven to 350 degrees and bake for 50-55-min





12 slices of bacon, fried and crumbled


1 cup (4 oz) shredded Swiss cheese


1/3 cup finely chopped onion


1 cup chopped ham


1 cup broccoli


2 cups milk


4 eggs


1/2 Bisquick


1/4 tsp salt


1/8 tsp pepper





Grease Lightly 10'; Pie Plate





Sprinkle Bacon, Ham, Onion, Broccoli, Cheese on bottom of pie plate





Blend remaining ingredients in blender on high speed for 1 minute





Pour gently over ingredients in the pie plate





Bake and let stand for 5-minutes before cutting.

PS/ I purchase the ingredients already chopped from the salad bar at the local grocery store. This simplifies everything.
