What is a good quiche recipe?

I'm looking for a delicious quiche recipe- also, what goes well along with quiche?

I like to ';clean out'; my fridge to make quiche.


Leftover veggies (broccoli, carrots, cauliflower, spinach), lunch meat(pastrami is awesome, ham, turkey), cheeses, sauteed onion and garlic. Just put your goodies into the unbaked pie shell and cover with 6 beaten eggs and about 1 cup of cream, milk or half and half, seasoned with your favorite seasonings. Bake for about an hour til it poofs up and browns nicely.

Quiche Lorraine with a nice tossed green salad


';For this classic recipe, crumbled bacon, Swiss cheese and a bit of diced onion are scattered in the bottom of a pastry shell and practically drowned in a luscious mixture of cream, eggs, sugar and cayenne pepper. The baked quiche is cooled slightly before being cut into beautiful wedges and served.';


INGREDIENTS:


1 recipe pastry for a 9 inch


single crust pie


12 slices bacon


1 cup shredded Swiss cheese


1/3 cup minced onion 4 eggs, beaten


2 cups light cream


3/4 teaspoon salt


1/4 teaspoon white sugar


1/8 teaspoon cayenne pepper





DIRECTIONS:


1. Preheat oven to 425 degrees F (220 degrees C).


2. Place bacon in a large skillet, and fry over medium-high heat until crisp. Drain on paper towels, then chop coarsely. Sprinkle bacon, cheese and onion into pastry shell.


3. In a medium bowl, whisk together eggs, cream, salt, sugar and cayenne pepper. Pour mixture into pastry shell.


4. Bake 15 minutes in the preheated oven. Reduce heat to 300 degrees F (150 degrees C), and bake an additional 30 minutes, or until a knife inserted 1 inch from edge comes out clean. Allow quiche to sit 10 minutes before cutting into wedges.



Broccoli Quiche


鈥?1 pie crust- pre-baked


鈥?1/2 sliced red onion


鈥?1 clove garlic, minced


鈥?2/3 cup broccoli florets, blanched and drained


鈥?3/4 cup grated swiss cheese


鈥?3 large eggs, slightly beaten


鈥?1 1/2 cups half-and-half


鈥?1/2 teaspoon salt


鈥?1/4 teaspoon pepper


鈥?1 pinch ground nutmeg








Directions


Brush frozen crust with egg yolk and prick thoroughly with a fork.


Prebake according to package instructions.


Saute the onion and garlic in olive oil until soft.


Mix the eggs, half and half, salt, pepper, and nutmeg.


Spread the onion, broccoli, and cheese on the bottom of the pie crust.


Pour in the egg mixture.


Bake at 375 for 25-30 minutes, or until set and browned.



Crayfish Quiche.


1/4 cup scallions, spring or green onions chopped


1/2 cup celery chopped


1 clove garlic crushed


1 pound crayfish tails


1 x salt and black pepper to taste


4 large eggs


2 cups milk


1 cup biscuit baking mix (bisquick)


1 cup cheddar cheese or swiss, chopped


Directions


In skillet, saut茅 onions, garlic and celery until clear.


Add crayfish, salt and pepper.


Simmer 5 minutes.


Grease pie plate.


Add craw fish mixture.


Beat eggs and milk for 1 minute.


Add biscuit mix; beat well.


Sprinkle cheese on top of crayfish.


Pour biscuit mixture over crayfish and cheese.


Bake at 350 degrees for 30 to 40 minutes.


Cool 5 minutes.


Serve warm.






I put 6 eggs, 3 slices ham diced up, 1 potato grated, 1 onion diced finely. 1 cup milk and a pinch of nutmet, pepper, mix everything together, bake in my pie shell.





I know, unsual but very good. My family loves it... I need to make one this week. maybe tomorrow. thanks for reminding me about the quiche.
