I'd like a good quiche recipe for making mini quiches (4''). I've got a good crust, just need the filling part

Quiche Lorraine





6 ounces bacon, cooked and crumbled


2/3 cup Swiss or Gruyere cheese, shredded

Broccoli and Brie





3/4 cup small broccoli florets


6 ounces brie, rind removed and cubed

Cauliflower and Havarti





1 cup small cauliflower florets


6 ounces havarti cheese, cubed


1 teaspoon caraway seeds


Add 1/4 cup dry white wine to the custard (optional)

Ham and Swiss Dijon





3/4 cup ham, diced


3/4 cup Swiss cheese, shredded


1 tablespoon Dijon mustard


Whisk mustard into custard.

Sweet Potato, Carrot and Cranberry





2/3 cup sweet potato, grated


2/3 cup, carrots, grated


2/3 cup cranberries, washed


1/4 cup Port wine (optional)


Boil grated sweet potatoes and carrots for 5 minutes, until tender. Drain Add cranberries and Port wine to a medium sauce pan and cook, over medium heat, stirring constantly, until cranberries are tender. Drain.

Asparagus and Parmesan





1 cup asparagus, cut into 1'; pieces


3/4 cup Parmesan cheese, shredded

Salmon and Dill





1 cup cooked or smoked salmon, chopped


1 tablespoon dried dill


1 tablespoon lemon juice


Whisk lemon juice into custard.

Artichoke and Parmesan





1 12-ounce jar marinated artichoke hearts, drained and chopped


4 ounces parmesan cheese, shredded

Tomato, Mozzarella Cheese and Basil





3/4 cup mozzarella cheese


1 tablespoon basil, dried


2 medium tomatoes, sliced thinly


1/2 teaspoon basil, fresh


Arrange sliced tomatoes on top of quiche halfway through baking. Sprinkle with fresh basil.

Zucchini and Shitake Mushrooms





1/2 cup zucchini, shredded


1/2 cup sliced shitake mushrooms


1/2 clove finely minced


1 tablespoon olive oil


1/2 teaspoon dried thyme


1/2 teaspoon dried marjoram


Saut茅 the zucchini, shitake mushrooms and garlic in olive oil and drain before adding to quiche shell.

Exotic Mushrooms and Fontina





1 cup mixed mushrooms


3/4 cup Fontina cheese, shredded

Stilton with Cranberry Chutney





6 ounces stilton cheese, rind removed and crumbled


Top each portion with a spoonful of cranberry chutney

Apple and Roquefort Cheese





3/4 cup Roquefort cheese, crumbled


1 large apple (any kind except red delicious), diced or thinly sliced

Apple and Smoked Cheddar Cheese





3/4 cup smoked cheddar cheese, cubed


1 large apple (any kind except red delicious), diced or thinly sliced

Gorgonzola, Pear, and Toasted Almond





3/4 cup Gorgonzola cheese, crumbled


3/4 cup pear, unpeeled and diced


1/4 cup almonds, sliced and toasted

Turkey Club





1 cup turkey, chopped into bite-sized pieces


3/4 cup Swiss cheese, grated


4 strips bacon, cooked and crumbled


2 small tomatoes, sliced and placed on top toward the end of cooking

The size of the Quiche doesn't matter try any of these!!
INGREDIENTS: * Eggs * Crisp bacon, crumbled * Chopped spinach * Shredded cheese ( I use Swiss) * Salt and pepper to taste. Whisk eggs well. Add bacon, spinach and cheese. Mix well. Pour into mini tart shells and bake until set
Saute 1/2 cup diced green onions and 1/2 a pound of mushrooms. Put into pie crusts. Cover with 1 cup of shredded Swiss cheese. Mix 1 cup of 1/2 and 1/2 with 4 eggs, salt and pepper, 1/4 cup of Parmesan cheese and add 1 can of drained flaked crab meat. Pour over cheese and bake about 50 min. Check often. I am not sure of time for minis. I make a regular sized pie. ( 9 inch )
1/2 Pound Bacon (cooked,drained broken into pieces).One medium onion diced fine.1/2 teaspoon salt.8oz.swiss cheese shredded.One cup of milk.Two eggs.1/2 cup of bisquick.
I got this recipe from www.BobEvans.com website about 2 weeks ago and made it for my Mom's church group. They all loved it!





Mini Sausage Quiches


陆 cup butter or margarine, softened


3 oz. cream cheese, softened


1 cup all-purpose flour


陆 lb. Bob Evans Italian Sausage Roll


1 cup shredded Swiss cheese


1 tbsp. snipped fresh chives


2 eggs


1 cup milk


录 tsp. salt


Dash cayenne pepper





Beat butter and cream cheese in medium bowl until creamy. Blend in flour; refrigerate 1 hour. Roll into 24 1-inch balls; press each into ungreased mini-muffin cup to form pastry shell. Preheat oven to 375F. To prepare filling, crumble and cook sausage in small skillet over medium heat until browned. Drain off any drippings. Sprinkle evenly into pastry shells in muffin cups; sprinkle with Swiss cheese and chives. Whisk eggs, milk, salt and cayenne until blended; pour into pastry shells. Bake 20-30 minutes or until set. Remove from pans. Serve hot. Refrigerate leftovers.





Makes 24 appetizers
