Does anyone have a good quiche recipe?

I would like a healthy quiche recipe that has some type of protein and veggie.Does anyone have a good quiche recipe?
Veggie Bacon Quiche:

Ingredients





1 uncooked 9-inch pie shell


1 cup zucchini , coarsely chopped


1/2 cup green bell peppers , diced


1/2 cup red bell peppers , diced


4-5 slices bacon , cut into 3/4-inch pieces


1 small chopped onion


1 cup shredded cheddar cheese


4 eggs


1 cup evaporated milk


1 tablespoon coarse grain mustard


2 tablespoons flour


parsley or red pepper flakes , to garnish (to garnish)





Directions





1. Precook piecrust in preheated 350-degree oven (prevents soggy crust).


2. In a large skillet, fry the bacon pieces until they are crisp.


3. Set bacon aside to drain on paper towel, but do not discard bacon drippings.


4. Saut茅 the onions, zucchini and peppers in the bacon drippings.


5. Drain the vegetables well and put them in the precooked crust followed by cheese.


6. Blend eggs, mustard, flour, and evaporated milk and pour the mixture into piecrust over other ingredients.


7. Bake at 350 degrees for 50 minutes.


8. After about 35 minutes of baking time, spread the cooked bacon pieces over the pie and sprinkle some more shredded cheese on top.


9. Pie is cooked when knife comes out clean when inserted in pie.


10. Let set for 5 minutes or so before cutting.


11. Garnish as desired and serve hot, warm, or cold.Does anyone have a good quiche recipe?
I make it using mashed potato round the edge of a Pyrex dish and then add two eggs, half a pint of milk and some ham, cheese, vegs and whatever in the middle and cook for 50 minutes till all brown on top.





This way you avoid the fat of pastry [that I can't have]
Broccoli %26amp; Rice Quiche

Ingredients


2 cups water


2 (10 ounce)packages frozen chopped broccoli


1/2 cup onions , chopped


3 cups cooked long-grain rice , cooked without salt or fat


6 ounces shredded reduced-fat sharp cheddar cheese , divided (1 1/2cups)


1 1/2 cups frozen egg substitute , thawed %26amp; divided


3/4 teaspoon salt , divided


vegetable oil cooking spray


1/2 teaspoon pepper


1/2 cup skim milk


2 (2 1/2 ounce)jars sliced mushrooms , drained








Directions


1Bring the water to a boil in a medium saucepan.


2Add broccoli and onion, and then cover, reduce heat, and simmer 8-10 minutes--until vegetables are tender.


3Drain well, and set aside.


4Combine rice, 1/2 cup cheese, 1/2 cup egg substitute, and 1/4 teaspoon salt.


5Press evenly over bottoms and up sides of two 9 inch quiche dishes or pie plates coated with cooking spray.


6Combine remaining 1 cup egg substitute, remaining 1/2 teaspoon salt, pepper, milk, mushrooms, and broccoli mixture in a bowl; stir well.


7Pour mixture evenly into prepared dishes.


8Bake at 375 degrees for 20 minutes.


9Remove from your oven and sprinkle evenly with remaining 1 cup cheese.


10Bake an additional 10 minutes or until cheese melts.


11Let stand 5 minutes before serving
Low-Fat Chicken Broccoli Quiche





1 1/2 cup of cooked broccoli, chopped


1 1/2 cup of cooked chicken, diced


1 small can of chopped mushrooms, drained


1 cup of Lite Ricotta cheese


1/2 cup of Low-fat plain yogurt


1 whole egg plus 1 egg white


4 tablespoons of flour


1/2 teaspoon of baking powder


1/2 teaspoon of salt


1/4 cup of Grated Parmesan cheese


2 tablespoons of margarine, melted


1/8 teaspoon of nutmeg








Mix chicken, broccoli, and mushrooms together and sprinkle into a 9 inch pie pan, which has been sprayed with Pam, saving some of the mixture for the top. Put remaining ingredients in a blender and blend until smooth. Pour over chicken mixture in pie pan. Top with the reserved chicken mixture. Bake at 350潞F. for 30 to 45 minutes, or until a knife inserted in the center comes out clean. Let stand 15 minutes before slicing. Yield: 4 servings, about 350 calories per serving.
Asparagus Ham Quiche





2 packages of frozen cut asparagus, thawed


1 pound of fully cooked ham, chopped


2 cups of Shredded Swiss cheese (8 oz)


1/2 cup of chopped onion


6 Eggs


2 cups of milk


1 1/2 cups of buttermilk baking mix


2 tablespoons of dried vegetable flakes


1/4 teaspoon of pepper








In two greased 9-in. pie plates, layer the asparagus, ham, cheese and onion. In a bowl, beat eggs. Add remaining ingredients and mix well. Divide in half and pour over asparagus mixture in each pie plate. Bake at 375潞F. for 30 minutes or until a knife inserted near the center comes out clean. Serves 12
