I am looking for a recipe for a quiche with spinach & cheese. I lost mine and haven't cooked it in years but

tried to remember all the ingredients from memory and think I have everything, just can't remember the quantities. Just something simple , not extremely fancy or difficult. ThanksI am looking for a recipe for a quiche with spinach %26amp; cheese. I lost mine and haven't cooked it in years but
Here's a basic quiche recipe to which any ingredients can be added:





1 pie shell (fresh or frozen)


4 whole eggs - beaten


1 cup of dairy product (milk, cream, half %26amp; half, plain yogurt, sour cream)





Mix the eggs and dairy for the custard, season with salt %26amp; pepper, and pour over any combination of ingredients. You can make one or 2 quiches with this amount of custard depending on the size of your pie shell and the amount of ';stuff'; you put in the quiche. The more stuff you put in, the less custard is required. I would use this custard for one large pie.





Stuff (any combination of these ingredients or other ingredients as you prefer):





1 pkg frozen spinach, thawed and squeezed dry


sauteed onions (drained)


grated cheese (swiss, cheddar, gruyere...)


chopped ham or bacon or sausage (cooked and crumbled)


seafood (shrimp, crab, crawfish...)


sauteed mushrooms (drained)


broccoli or cauliflower florets (blanched and drained)





Basic rule for ';stuff'; -- drain it if it's wet. cooking liquid or juices released while cooking will keep the custard from setting properly (think scrambled eggs). That's why you should squeeze the spinach dry and drain the sauteed things. Be careful with any fresh veggies since they will release juices as they cook. Sautee or blanche first and drain.





Quiche is easy and yummy. Remember the custard proportions (4 eggs to 1 cup dairy) and you'll always be able to make a great quiche!

20 oz. spinach, thawed %26amp; moisture squeezed out


10 oz. cottage cheese


8 oz. cheese shredded (your choice)


4 beaten eggs (for health sake, use 6 egg white, or 5 whites and 1 whole)


1/4 to 1/2 C. butter or olive oil


2 T. plain flour


Seasoning to taste: Mrs. Dash, Accent, salt/pepper


PREPARATION:


Butter or ';Pam'; a 2-3 quart shallow dish, such as a ';french white'; dish. Stir it all up well and put into the prepared baking dish. Bake in preheated 350 degree oven until it puffs up, approximately 20 minutes.

Spinach Quiche





Ingredients:





鈥?1 cup shredded cheddar cheese


鈥?1 cup shredded Swiss cheese


鈥?1 frozen pie crust (9-inch) -- thawed


鈥?1/2 cup real bacon bits


鈥?10 ounces frozen chopped spinach -- thawed %26amp; drained


鈥?3 eggs


鈥?1 cup heavy cream


鈥?1 teaspoon onion powder


鈥?1/4 teaspoon white pepper


鈥?1/4 teaspoon ground nutmeg





Directions:





Preheat oven to 350F. In a medium bowl, combine the cheddar and Swiss cheeses. Sprinkle half of the mixture over the bottom of the piecrust. Sprinkle with bacon bits and spinach, then the remaining cheese. In the same bowl, beat eggs, heavy cream, onion powder, and white pepper until thoroughly combined. If adding dried onions, sprinkle on the bacon and spinach.





Pour into the pie crust and sprinkle the top with nutmeg. Bake 40-45 minutes, or until filling is set. Let cool on a wire rack 5 minutes. Cut into wedges and serve.

Spinach Quiche





INGREDIENTS


1/2 cup butter


3 cloves garlic, chopped


1 small onion, chopped


1 (10 ounce) package frozen chopped spinach, thawed and drained


1 (4.5 ounce) can mushrooms, drained


1 (6 ounce) package herb and garlic feta, crumbled


1 (8 ounce) package shredded Cheddar cheese


salt and pepper to taste


1 (9 inch) unbaked deep dish pie crust


4 eggs, beaten


1 cup milk


salt and pepper to taste





DIRECTIONS


Preheat oven to 375 degrees F (190 degrees C).





In a medium skillet, melt butter over medium heat. Saute garlic and onion in butter until lightly browned, about 7 minutes. Stir in spinach, mushrooms, feta and 1/2 cup Cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust.





In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell, allowing egg mixture to thoroughly combine with spinach mixture.





Bake in preheated oven for 15 minutes. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving.
OK...First bang up some short crust by putting about 250g of cold chopped up butter and 500g of flour into a food processor and pulse it a bit.Add enough cold water to turn it into pastry with a couple of pulses.


(Try not to overwork it and if you add too much water just take the pastry out and lightly knead in some flour.)


Let it rest for about 15 to 20 minutes.





Roll It out to fit your oven tray, cover it with grease proof paper and cook it for about 10 -15 minutes without browning it .





Meanwhile put 500ml of double cream,500ml of milk,Some salt and pepper, 4 egg yolks and 4 eggs in a bowl and mix with a whisk till its all well combined.Add about 250g of defrosted frozen chopped spinach,100g of chopped goats cheese,100g of grated(not too finely) cheddar and if you want to you can add six small balls of mozzarella(leave em whole)


Mix it all together and poor it into your baked crust (It doesn't matter if its still hot.)Put some cheese on top of the quiche and bang it in a 180掳c oven for about twenty minutes (or until its set ).





Let it stand for about five minutes till you make a rocket and toasted walnut salad with rocket leaves olive oil and a bit of balsamic vinegar and obviously toasted walnuts,take a seat and enjoy.





Note:You can add loads of different things to it that may be rotting away in the fridge...some fried chopped up bacon or mushrooms, some toasted walnuts..and basically any cheese.





Make sure your pastry case is big enough for the quiche mixture.
