I try to keep frozen pie crust around then when I'm not feeling creative in the kit. or short on time i thro in some leftover veggies and meat or fry some up,season and whip the eggs acording to what i put in and bake.
This is good for a quick meal or to get hubby or kids to eat things they aren't fond of. Sometimes I fix a small one for myself cause I hate cooking for one when hubby is at work.
Also try spraying pie pan with oil (Pam,etc) and putting all except crust in and bake top with cheese.What is your favorite recipe for a quiche that is quick and simple?
Jarlsburg Quiche
Ingredients
1 recipe favorite pie crust, fitted into a 9'; pie plate
1 tablespoon unsalted butter
1 cup onion, chopped
1/4 lb. mushrooms, sliced
coarse salt
freshly ground black pepper
1 teaspoon dried thyme
1/2 teaspoon dry mustard, such as Colman's
4 large eggs
1 cup milk
2 tablespoons flour
1 cup [packed] grated Jarlsburg cheese

Method
Preheat oven to 375.
Melt the butter in a small pan and add the onions. Sauté over medium heat for a few minutes. When they begin to soften, add mushrooms, salt, pepper, thyme, and mustard.
Sauté 5 minutes longer and remove from heat. Combine eggs, milk, and flour in a blender or food processor and beat well. Spread the grated cheese over the bottom of the prepared crust and spread the onion-mushroom mixture on top. Pour in the custard, and sprinkle the top with paprika.
Bake 40 minutes or until solid in the center. Serve hot, warm, or at room temperature.
For a hint of “hot”, add 1 teaspoon prepared horseradish and/or cayenne or Tabasco to the custard. Decorate the top with fresh sliced tomatoes before baking. Substitute other cheeses for the Swiss.
