What's a good, quick quiche recipe that requires few ingredients?

I just want to whip something together for dinner really fast and I don't think I have that much stuff in my fridge.

Quick Quiche





8 slices bacon


4 ounces shredded Swiss cheese


2 tablespoons butter, melted


4 eggs, beaten


1/4 cup finely chopped onion


1 teaspoon salt


1/2 cup all-purpose flour


1 1/2 cups milk





Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.


Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.


Line bottom of pie plate with cheese and crumbled bacon. Combine eggs, butter, onion, salt, flour and milk; whisk together until smooth; pour into pie pan.


Bake in preheated oven for 35 minutes, until set. Serve hot or cold.

BASIC QUICHE





10'; unbaked pie shell


1 tbsp. butter, softened


1 c. grated cheese


1 tbsp. flour


1/4 tsp. salt


Pepper to taste


Pinch of nutmeg


6 eggs


1 pt. light cream


1/4 c. Parmesan cheese


2 tbsp. butter, melted %26amp; browned





Spread butter on bottom of pie shell. Sprinkle Swiss cheese in bottom of pie shell. Sift dry ingredients. Add eggs and cream to dry ingredients and beat until mixed but not frothy. Pour custard over cheese. Bake at 450 degrees for 10 minutes. Reduce heat to 325 degrees and bake 25 minutes longer. Remove from oven and sprinkle with Parmesan cheese and butter. Return to oven for 10 minutes or until a knife inserted in custard comes out clean. Let set 10 minutes before cutting into wedges to serve.


Variations of Basic Quiche: Quiche Lorraine: 8 slices of crisp bacon, crumbled. Shrimp, crab, mushroom, asparagus.

This traditional cheeseless quiche requires a somewhat longer baking time and must stand for half an hour before serving.

Egg Pastry for Quiche


4 eggs


1 1/4 cups half-and-half


1/2 cup whipping cream


3/4 teaspoon salt


1/4 teaspoon ground white pepper


1/4 teaspoon freshly grated nutmeg





Heat oven to 375 degrees F.





Prepare Egg Pastry for Quiche and bake the empty shell for 10 minutes. Remove from oven and set aside.





Saut茅 bacon in a skillet over medium-high heat until barely crisp (about 6 minutes); drain well. Chop into pieces and sprinkle over bottom of the partially baked quiche shell.





In a mixing bowl, beat eggs and stir in half-and-half, cream, salt, pepper and nutmeg. Pour over bacon in shell and bake until knife inserted in center comes out clean (45 to 50 minutes); custard will be soft. Remove from oven and cool 30 minutes. Serve at room temperature.





Egg Pastry:


1 1/4 cups all-purpose flour


1/4 teaspoon salt


1/4 cup butter


2 tablespoons vegetable shortening


1 egg, slightly beaten





In medium bowl, mix flour and salt. Using a pastry blender or two knives, cut in butter and shortening until mixture is crumbly.





Gradually add egg to flour mixture, stirring until dough is evenly moistened and begins to cling together. Shape into a flattened ball.





Roll out on a floured board or pastry cloth to about a 12-inch circle. Ease pastry into a 9 1/2-inch quiche pan. Trim edge to about a 1/2-inch overhang, then fold pastry under, even with top of dish.
