Does anyone have a good recipe for low fat quiche?

Want to make a quiche but want one which is lower is fat (if thats possible!) anyone have any suggestions? =)Does anyone have a good recipe for low fat quiche?
Quiche


Prep: 25 minutes


Bake: 52 minutes





Ingredients


1 recipe Pastry for Single-Crust Pie or 1/2 of a 15-ounce package rolled refrigerated unbaked pie crust (1 pie crust)


4 eggs, lightly beaten


1-1/2 cups half-and-half, light cream, or milk


1/4 cup sliced green onions


1/4 teaspoon salt


1/8 teaspoon black pepper


Dash ground nutmeg


3/4 cup chopped cooked ham, chicken, or crabmeat (about 3 1/2 ounces)


1-1/2 cups shredded Swiss, cheddar, Monterey Jack, and/or Havarti cheese (6 ounces)


1 tablespoon all-purpose flour





Directions


1. Prepare and roll out Pastry for Single-Crust Pie or unroll refrigerated pie crust according to package directions. Line a 9-inch pie plate with pastry. Trim; crimp edge as desired. Line unpricked pastry with a double thickness of foil. Bake in a 450 degree F for 8 minutes. Remove foil. Bake for 4 to 5 minutes more or until pastry is set and dry. Remove from oven. Reduce oven temperature to 325 degrees F.





2. Meanwhile, in medium bowl stir together eggs, half-and-half, green onions, salt, pepper, and nutmeg. Stir in ham. In a small bowl toss together the cheese and flour. Add to egg mixture; mix well.





3. Pour egg mixture into hot, baked pastry shell. Bake in the 325 degree Foven for 40 to 45 minutes or until knife inserted near center comes out clean. Let stand 10 minutes before serving. Makes 6 servings.





4. Lower Fat Quiche: Prepare as above, except substitute Oil Pastry for the Pastry for Single-Crust Pie. Substitute 1 cup refrigerated or frozen egg product, thawed, for the eggs, fat-free milk for the cream, and use reduced-fat cheddar, Swiss, or Monterey Jack cheese for the cheese.Does anyone have a good recipe for low fat quiche?
make a crustless quiche! it's easier, and cuts out the butter you'd use in the crust. =) use filling ingredients that are lower in fat, such as lean meat and plenty of veggies. you might also want to experiment with using egg substitute for about half the eggs in the recipe.
Spinach and Spaghetti Squash Quiche





* 1/2 cup frozen chopped spinach , thawed, drained and squeezed dry


* 1/2 cup cooked, shredded spaghetti squash


* 1 beaten egg


* 3 egg whites


* 1 (12 fluid ounce) can evaporated skim milk


* 1 cup part-skim-milk mozzarella cheese


* cooking spray


* 1/3 cup bread crumbs





1. Preheat oven to 350 degrees F (175 degrees C).





2. Pierce squash several times with a fork, and place in a microwave-safe dish. Microwave on high for 10 minutes, turn over, and continue cooking 10 minutes more. Squash flesh should be very tender inside. Set aside to cool.





3. Cut squash in half lengthwise and scoop out seeds. Shred 1/2 cup of squash and place in a mixing bowl. Stir in egg, egg whites, evaporated milk, mozzarella cheese, and spinach until well combined. Spray a 9 inch pie place or quiche dish with cooking spray. Spread bread crumbs in the bottom and around the sides to coat. Pour egg mixture into prepared dish.





4. Bake quiche in the preheated oven for 45 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for at least 10 minutes before cutting. Serve warm or at room temperature.
I would think low-fat quiche (at least edible quiche) would be an oxymoron.

Ham and Swiss Quiche








Quiche is a dish perfect for any meal of the day. A deep-dish pie shell filled with the delicious ingredients including savory ham, Swiss cheese and evaporated milk.





Contrary to popular belief, real men do eat quiche . . .











Estimated Times:


Preparation - 20 min | Cooking - 45 min | Cooling Time - 10 min cooling | Yields - 8





Ingredients:





1 unbaked 9-inch (4-cup volume) deep-dish pie shell


1 cup (4 oz.) shredded Swiss cheese, divided


1 cup finely chopped, cooked ham


2 green onions, sliced


1 can (12 fl. oz.) CARNATION Evaporated Milk


3 large eggs


1/4 cup all-purpose flour


1/4 teaspoon salt


1/8 teaspoon ground black pepper








Directions:


PREHEAT oven to 350掳 F.





SPRINKLE 1/2 cup cheese, ham and green onions into pie shell. Whisk together evaporated milk, eggs, flour, salt and pepper in large bowl. Pour mixture into pie shell; sprinkle with remaining cheese.





BAKE for 45 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 10 minutes before serving.





VARIATION: For a lattice-top quiche, use ready-made pie pastry for single crust pie. Cut pastry into 1/2-inch-wide strips. Lay pastry strips over filling in lattice-fashion, turning pastry over outside edge of dish. Bake as directed above.























Ham and Cheese Quiche


Makes 8 servings.





Pastry


1 cup all-purpose flour


1/2 teaspoon salt


1/3 cup plus 1 tablespoon chilled solid vegetable shortening


2 tablespoons cold water





Filling


2 tablespoons butter


1 onion, finely chopped


1 1/2 cups (16 ounces) shredded Swiss cheese


1 cup chopped cooked ham


2 large eggs


2 large egg yolks


1/2 cup half-and-half


1/2 cup heavy cream


Pinch of salt


Pinch of cayenne pepper


Pinch of ground nutmeg





To prepare pastry, in a medium bowl, mix together flour and salt. Using a pastry blender or 2 knives, cut shortening into flour mixture until coarse crumbs form.





Add water, 1 tablespoon at a time, tossing with a fork, until a dough forms. Shape dough into a disk, wrap in plastic wrap, and chill for 30 minutes.





On a floured surface, using a floured rolling pin, roll dough into a 10-inch circle. Fit into a 9-inch quiche or pie pan. Trim edges.





To prepare filling, in a skillet, melt butter over medium heat. Add onion; cook, stirring occasionally, until softened, 6 to 8 minutes. Remove from heat; cool.





Preheat oven to 375 degrees F. Sprinkle 3/4 cup of cheese over crust. Top with onion, then ham. Sprinkle with remaining cheese.





Whisk together eggs, egg yolks, half-and-half, cream, salt, cayenne and nutmeg. Pour egg mixture over ham and cheese.





Bake quiche until golden and custard is set, 35 to 45 minutes. Let rest for 5 minutes before serving

Melt 1/2 cup butter on medium heat in large saucepan.


Remove %26amp; add 1 cup all-purpose flour,


1/2 cup frozen hash-brown potatoes,


1/2 cup grated cheddar cheese,


1/2 tsp worcester sauce, 1/2 tsp salt, 1/4 tsp onion powder.


Stir well, press into bottom of 9'; pie plate, set aside.


Cube enough ham to cover the surface, 1-2 cups.


Sprinkle 1 cup grated Swiss cheese over the ham.


Scatter 1/3 cup chopped green onion over that.


Beat 3 large eggs with 1 1/2 cup sour cream,


1 tbsp all-purpose flour, 1/2 tsp salt, 1/8 tsp pepper,


optional dash of nutmeg. Pour over ham/cheese/onions.


Bake on bottom rack in 375F oven for 40 minutes.


Until inserted knife in centre comes out cleanly.

2 oz Swiss or Gruyere cheese, shredded


pie shell, 10 in., baked


eggs, 4 each

Place ham and cheese in baked pie shell.


Combine eggs, milk and heavy cream. Season with salt, pepper, and nutmeg.


Fill pie shell with the custard mixture


Bake in preheated 350 degree oven for 1 hour until set.

Herbed Ham and Vegetable Quiche





Ingredients


2 cups thinly sliced zucchini and/or yellow summer squash _ am not a big zucchini or squash fan and I usually substitute broccoli and/or cauliflower florettes broken/cut up small


1 cup chopped onion


1/2 cup sliced fresh mushrooms


1/2 cup chopped red sweet pepper


1 tablespoon butter


1/4 cup snipped fresh parsley or 1 tablespoon dried parsley


2 tablespoons snipped fresh basil or 1 teaspoon dried basil, crushed


1/4 teaspoon garlic powder


1 teaspoon snipped fresh oregano or 1/4 teaspoon dried oregano, crushed


1/8 teaspoon pepper


2 beaten eggs


1 cup diced fully cooked ham


1 cup shredded mozzarella cheese


1 cup shredded Swiss cheese


1/2 cup shredded fontina cheese (2 ounces)


1 17.3-ounce package (8) refrigerated biscuits


Fresh basil (optional)





Directions


For filling, in a large skillet cook zucchini and/or squash, onion, mushrooms, and sweet pepper in hot butter about 6 minutes or just until tender, stirring occasionally. Remove from heat. Stir in parsley, basil, garlic powder, oregano, and pepper. Stir in eggs, ham, mozzarella, Swiss and fontina cheeses. Set aside.





For crust, in a greased 10-inch quiche dish arrange 7 slightly flattened biscuits around the edge of the dish, allowing dough to extend over sides. Place remaining biscuit in bottom of dish. Pinch edges together to seal. Flatten slightly to form a crust.





Spread filling evenly in the crust. Bake in a 375 degree F oven about 25 minutes or until a knife inserted near the center comes out clean, covering the edge with foil the last 5 to 10 minutes to prevent over-browning. Let stand for 10 minutes. Garnish with additional fresh basil, if desired. Makes 6 servings.

Individual Ham and Cheese Quiches





Ingredients


1 15-ounce package rolled refrigerated unbaked piecrust (2 crusts)


1/2 cup shredded Italian cheese blend


1/2 cup finely chopped sweet red pepper


1/4 cup finely chopped peppered or smoked cooked ham


1 tablespoon thinly sliced green onion or 1-1/2 teaspoons snipped fresh chives


1-1/2 teaspoons all-purpose flour


1/4 teaspoon Italian seasoning, crushed


1/8 teaspoon salt


1/8 teaspoon ground black pepper


3 eggs, slightly beaten


1/2 cup half-and-half, light cream, or milk


Fresh herb springs, such as basil, oregano or thyme (optional)





Directions


Let piecrusts stand at room temperature according to package directions. Preheat oven to 400 degrees F. Cut each piecrust into four equal sections (eight sections total). Press sections of piecrust onto the bottom and up the sides of eight, 4-inch fluted individual tart pans* with removable bottoms. Trim excess dough from top of pans.





Line each pastry shell with a double thickness of foil. Place pans on a baking sheet. Bake in preheated oven for 7 minutes. Remove foil. Bake 2 to 3 minutes more or until pastry is set and dry. Remove from oven. Reduce oven temperature to 325 degrees F.





In a medium bowl combine shredded Italian cheese blend, red sweet pepper, ham, green onion, flour, Italian seasoning, salt and pepper. Divide mixture evenly among pastry shells.





In the same bowl beat together eggs and half-and-half. Pour egg mixture over filling mixture in each pastry shell. Bake for 20 minutes or until filling is set. Let stand 5 minutes before serving. If desired, top with a fresh herb sprig.





Makes 8 individual servings





To make one large quiche: Line a 10-inch tart pan with removable bottom with one piecrust (reserve remaining piecrust for another use). Line with double thickness of foil. Bake in 400 degrees F. oven for 7 minutes. Remove foil; bake 8 to 9 minutes longer or until pastry is set, dry and lightly browned. Sprinkle cheese mixture evenly in shell. Pour egg mixture over cheese. Bake in 325 degrees F oven for 30 minutes or until set. Let stand 10 minutes before serving.

Do you have the Vegetarian Times recipe for a simple quiche crust?

It was from a fairly recent issue--within the past year or two, I think. It was in an article with cabbage pie and cheese quiche. It was really nice and simple, and I think it substituted vegetable oil for most or all of the butter/shortening in a normal recipe. Does anyone have it?     4 eggs


    1 can cheddar cheese soup


    1/2 c. light cream


    1 c. shredded cheddar cheese


    1/2 c. diced cooked ham


    1/2 c. cooked broccoli


    1 9'; unbaked piecrust





    In a bowl, hand beat (or medium setting on mixer) beat the eggs until fluffy. Add soup and cream; mix well. Sprinkle cheese, meat, and broccoli over unbaked pie crust. Follow with soup mix. Bake for 50 minutes at 350掳F.

    INGREDIENTS:





    * 1 1/3 cups all-purpose flour

    * 1/2 cup cold butter, cut in small pieces

    PREPARATION:


    Prepare crust for quiche. In a mixing bowl, mix together flour and salt. Shape into a disk, wrap in plastic wrap, and refrigerate for about 30 minutes.





    On a lightly floured surface with a floured rolling pin, roll out dough into a circle about 11 inches in diameter. Fit dough into a 9-inch pie plate or quiche pan. Trim edges, leaving a little overhang, about 1/4-inch all around the edge. Prick dough with a fork. Line with foil and fill with dried beans or pie weights. Bake quiche crust for 10 minutes at 375掳.





    In a small bowl, whisk together the eggs, milk, thyme, and pepper. Pour into the baked crust. Crumble bacon over the top with the shredded Cheddar cheese. Bake at 375掳 for about 30 minutes, or until quiche filling is set and top is lightly browned. Serve the quiche with fresh tomato wedges or a tossed salad.

    INGREDIENTS:





    * 1 pastry shell (9 inch), partially baked


    * 1 tablespoon butter


    * 2 tablespoons shallots, minced


    * 1 cup crabmeat


    * 1 tablespoon flour


    * 1 1/2 cups Swiss cheese, shredded/divided


    * 3 eggs


    * 1 cup half and half


    * 1/2 teaspoon salt


    * dash white pepper or hot pepper sauce


    * dash nutmeg


    * minced parsley





    PREPARATION:


    Have a 9-inch pastry shell partially baked. Saute shallots in butter until tender, about 2 minutes; mix with crabmeat and flour; set aside. Sprinkle 3/4 cup the cheese in the pie shell, then spread with crab mixture. Sprinkle with remaining 3/4 cup of cheese. Beat eggs, cream, salt, pepper, nutmeg, and parsley until mixed. Pour into shell. Bake for 25 to 30 minutes at 350 degrees.


    Serves 6 to 8.





    --------------Jalapeno Quiche





    INGREDIENTS:





    * 1 frozen pie shell, baked, but not browned


    * 1/2 c. ham, chopped


    * 4 slices bacon, crumbled


    * 2 cups Mexican blend cheese


    * 1/4 c. onion, chopped


    * 1 med. tomato, chopped


    * 2 jalapeno peppers, seeds removed, chopped


    * 2 tbsp. chopped mushrooms , optional


    * 1 tbsp. parsley


    * 4 eggs, beaten


    * 1 tsp. dry mustard


    * 1/2 c. sour cream





    PREPARATION:


    Layer the first 9 ingredients in pie shell. Combine eggs, sour cream and mustard; mix well. Pour over ingredients and bake at 350 degrees for about 45 minutes, or until a knife inserted in the center comes out clean.





    If the edges of the pie crust begin to get too brown, cover with strips of aluminum foil.





    -----------------Chile Cheese Quiche





    INGREDIENTS:





    * 1 9-inch pie shell, in pan or homemade


    * 3 large eggs


    * 1 cup milk


    * 1 cup of mayonnaise


    * 2 1/2 cups Monterey Jack Cheese


    * 1 small can chopped green chiles


    * salt


    * 1 cup peeled diced potato


    * 1/3 cups green onion


    * 2 tab olive oil


    * .


    * Salsa


    * 2 cups diced fresh tomato


    * 1/4 cup green pepper


    * 2 jalapenos peppers minced


    * 1/4 cup sliced green onion


    * Fresh chopped cilantro





    PREPARATION:


    Fit pie crust into 9-inch pie plate and prick in several places with a fork.





    Bake crust at 400掳 for 5 minutes. Whisk together eggs, milk, mayonnaise then stir in Cheese, green chiles, salt and pepper.





    Set aside.





    Saute potato and 1/3 cup of green onions in skillet in hot oil, until tender and browned.





    Spoon potato mixture into crust, then pour egg mixture over potato. Bake at 350掳 for 40 minutes, or until set.





    For salsa, combine tomato, chopped green pepper, minced jalapeno and sliced green onions. If desired, add a little fresh chopped cilantro. Serve salsa cold with room temperature quiche.
    Quiche - Master Recipe





    1 pie crust or pastry crust, parbaked


    2 eggs


    2 egg yolks


    1 cup whole milk


    1 cup heavy cream


    1/2 teaspoon salt


    1/2 teaspoon pepper


    1/2 cup cheese





    Preheat oven to 375.


    Fill parbaked shells and bake until set.


    Any filling you wish to use.


    Serve warm or at room temperature.

    In a medium bowl, whisk together eggs, cream, salt, sugar and cayenne pepper. Pour mixture into pastry shell.


    Bake 15 minutes in the preheated oven. Reduce heat to 300 degrees F (150 degrees C), and bake an additional 30 minutes, or until a knife inserted 1 inch from edge comes out clean. Allow quiche to sit 10 minutes before cutting into wedges.
    Crab Quiche





    1/2 cup mayonnaise


    2 Tbsp flour


    2 eggs, beaten


    1/2 cup milk


    11/2 cups crab-meat (71/2 oz can)


    8 oz Swiss cheese, grated (I use any mix of cheeses I have on hand)


    1/4 cup sliced green onion





    Mix the mayo, flour, eggs %26amp; milk. Fold in the crab, cheese %26amp; onion. Pour into a 9'; pie plate or quiche pan (no crust needed). Bake at 350 F for 40-45 mins. until knife inserted in the centre comes out clean.





    I often add finely chopped leftover veggies to it as well as chopped reg. onion. It is especially good with leftover cauliflower.

    Here's a basic quiche recipe to which any ingredients can be added:





    1 pie shell (fresh or frozen)


    4 whole eggs - beaten


    1 cup of dairy product (milk, cream, half %26amp; half, plain yogurt, sour cream)





    Mix the eggs and dairy for the custard, season with salt %26amp; pepper, and pour over any combination of ingredients. You can make one or 2 quiches with this amount of custard depending on the size of your pie shell and the amount of ';stuff'; you put in the quiche. The more stuff you put in, the less custard is required. I would use this custard for one large pie.





    Stuff (any combination of these ingredients or other ingredients as you prefer):





    1 pkg frozen spinach, thawed and squeezed dry


    sauteed onions (drained)


    grated cheese (swiss, cheddar, gruyere...)


    chopped ham or bacon or sausage (cooked and crumbled)


    seafood (shrimp, crab, crawfish...)


    sauteed mushrooms (drained)


    broccoli or cauliflower florets (blanched and drained)





    Basic rule for ';stuff'; -- drain it if it's wet. cooking liquid or juices released while cooking will keep the custard from setting properly (think scrambled eggs). That's why you should squeeze the spinach dry and drain the sauteed things. Be careful with any fresh veggies since they will release juices as they cook. Sautee or blanche first and drain.





    Quiche is easy and yummy. Remember the custard proportions (4 eggs to 1 cup dairy) and you'll always be able to make a great quiche!

    鈥?1 teaspoon onion powder


    鈥?1/4 teaspoon white pepper

    Directions:





    Preheat oven to 350F. In a medium bowl, combine the cheddar and Swiss cheeses. Sprinkle half of the mixture over the bottom of the piecrust. Sprinkle with bacon bits and spinach, then the remaining cheese. In the same bowl, beat eggs, heavy cream, onion powder, and white pepper until thoroughly combined. If adding dried onions, sprinkle on the bacon and spinach.





    Pour into the pie crust and sprinkle the top with nutmeg. Bake 40-45 minutes, or until filling is set. Let cool on a wire rack 5 minutes. Cut into wedges and serve.

    Spinach Quiche





    INGREDIENTS


    1/2 cup butter


    3 cloves garlic, chopped


    1 small onion, chopped


    1 (10 ounce) package frozen chopped spinach, thawed and drained


    1 (4.5 ounce) can mushrooms, drained


    1 (6 ounce) package herb and garlic feta, crumbled


    1 (8 ounce) package shredded Cheddar cheese


    salt and pepper to taste


    1 (9 inch) unbaked deep dish pie crust


    4 eggs, beaten


    1 cup milk


    salt and pepper to taste





    DIRECTIONS


    Preheat oven to 375 degrees F (190 degrees C).





    In a medium skillet, melt butter over medium heat. Saute garlic and onion in butter until lightly browned, about 7 minutes. Stir in spinach, mushrooms, feta and 1/2 cup Cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust.





    In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell, allowing egg mixture to thoroughly combine with spinach mixture.





    Bake in preheated oven for 15 minutes. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving.
    OK...First bang up some short crust by putting about 250g of cold chopped up butter and 500g of flour into a food processor and pulse it a bit.Add enough cold water to turn it into pastry with a couple of pulses.


    (Try not to overwork it and if you add too much water just take the pastry out and lightly knead in some flour.)


    Let it rest for about 15 to 20 minutes.





    Roll It out to fit your oven tray, cover it with grease proof paper and cook it for about 10 -15 minutes without browning it .





    Meanwhile put 500ml of double cream,500ml of milk,Some salt and pepper, 4 egg yolks and 4 eggs in a bowl and mix with a whisk till its all well combined.Add about 250g of defrosted frozen chopped spinach,100g of chopped goats cheese,100g of grated(not too finely) cheddar and if you want to you can add six small balls of mozzarella(leave em whole)


    Mix it all together and poor it into your baked crust (It doesn't matter if its still hot.)Put some cheese on top of the quiche and bang it in a 180掳c oven for about twenty minutes (or until its set ).





    Let it stand for about five minutes till you make a rocket and toasted walnut salad with rocket leaves olive oil and a bit of balsamic vinegar and obviously toasted walnuts,take a seat and enjoy.





    Note:You can add loads of different things to it that may be rotting away in the fridge...some fried chopped up bacon or mushrooms, some toasted walnuts..and basically any cheese.





    Make sure your pastry case is big enough for the quiche mixture.

    4 tablespoons (1/2 stick) butter, melted

    1 cup half-and-half


    3/4 cup diced cooked ham


    1/2 cup diced green onions


    1 cup shredded Cheddar


    Salt and freshly ground black pepper





    Preheat oven to 450 degrees F.


    Gently press the drained hash browns between paper towels to dry them as best as possible. In a 9-inch pie plate, toss the hash browns with the melted butter into the plate. Press them into the bottom and up the sides to form a crust. Bake for 20 to 25 minutes until golden brown and starting to crisp.





    Meanwhile, in a large mixing bowl, combine the remaining ingredients. When the hash brown crust is ready pour the egg mixture over it and return to the oven.

    INGREDIENTS: * Eggs * Crisp bacon, crumbled * Chopped spinach * Shredded cheese ( I use Swiss) * Salt and pepper to taste. Whisk eggs well. Add bacon, spinach and cheese. Mix well. Pour into mini tart shells and bake until set
    Saute 1/2 cup diced green onions and 1/2 a pound of mushrooms. Put into pie crusts. Cover with 1 cup of shredded Swiss cheese. Mix 1 cup of 1/2 and 1/2 with 4 eggs, salt and pepper, 1/4 cup of Parmesan cheese and add 1 can of drained flaked crab meat. Pour over cheese and bake about 50 min. Check often. I am not sure of time for minis. I make a regular sized pie. ( 9 inch )

Just put your goodies into the unbaked pie shell and cover with 6 beaten eggs and about 1 cup of cream, milk or half and half, seasoned with your favorite seasonings. Bake for about an hour til it poofs up and browns nicely.

    Grease pie plate.


    Add craw fish mixture.


    Beat eggs and milk for 1 minute.

    I put 6 eggs, 3 slices ham diced up, 1 potato grated, 1 onion diced finely. 1 cup milk and a pinch of nutmet, pepper, mix everything together, bake in my pie shell.

Cook the bacon in a heavy skillet, stirring constantly until the fat is almost rendered out. But the bacon is not yet crisp. Drain on absorbent toweling. Scald to hasten the cooking time 2 cups milk or cream. Cool slightly, then beat together with 3 whole eggs, 1/4 tsp salt, 1/8 tsp white pepper, a fresh grating of nutmeg, 1 tsp chopped chives. Sprinkle in the bottom of the pie shell the bacon and add 1/2 c diced Swiss cheese. Pour the custard mixture over it. Bake 35 to 40 minutes or until the top is a golden brown and a knife tests clean.

    Mini Quiche Recipe





    These quiches can be slightly undercooked and kept in the fridge to be reheated when required. We have used ham in the recipe below, but other fillings could be used such as corn, mushrooms (cooked first to remove excess moisture), semi-dried tomato, cooked salmon, shallots, and herbs.


    2 sheets frozen puff pastry (thawed)


    90g grated tasty cheese


    115g finely chopped shaved leg ham


    3 eggs


    90ml (4 1/2 tablespoons) thickened cream


    3 teaspoons grated onion


    1/4 teaspoon nutmeg


    Salt and pepper





    Preheat oven to 200 degrees Celsius. Grease a muffin tin that has approximately 8cm diameter holes.


    Cut pastry using a round cutter with a diameter of 6cm. Line each muffin hole with a pastry round.


    Divide grated cheese between pastry cases. Top cheese with ham.


    Using a fork, lightly beat eggs in a small bowl. Add cream, grated onion, nutmeg, salt and pepper. Beat to combine. Spoon a scant tablespoon of egg mixture into each pastry case.

    8 oz Cottage cheese-small curd


    1/4 c Sour cream


    4 oz Shredded sharp cheddar cheese


    1/2 c Bisquick


    1/4 c Melted butter

    INGREDIENTS


    12 slices bread


    1 onion, grated


    1/2 cup shredded Swiss cheese

    Preheat oven to 375 degrees F (190 degrees C). Lightly grease 12 muffin tins.


    Trim or cut bread into circles. Place circles in bottom of muffin tins. Distribute the onion and shredded cheese evenly between the muffin tins.


    In a medium bowl, combine milk, eggs, mustard and pepper. Divide between the muffin tins.


    Bake in preheated oven for 20 minutes, or until a toothpick inserted into the center of a quiche comes out clean.

    1 cup chopped green onion with tops

    Mini Swiss Cheese Quiche





    2 prepared pie pastry (enough to cut out 25 2-1/2-inch rounds)


    2 cups finely shredded swiss cheese


    2 green onions, finely chopped


    2 eggs


    1/2 cup half-and-half


    3 tablespoons canned pimientos, finely chopped (can use less)


    salt (I use about 1/4 teaspoon)


    1 pinch cayenne pepper


    2 tablespoons parmesan cheese





    Heat oven to 375 degrees.


    Spray 24 mini muffin tins with nonstick cooking spray.


    Roll out the dough, then cut into 24-26 2-1/2-inch rounds (you might get less).


    Press one round into the bottom and sides of each mini muffin tin.


    Place about 1 tablespoon of shredded cheese in the bottom of the crust.


    Top with a few green onions, and then some chopped pimientos.


    In a small bow, whisk together the eggs, half and half cream, salt, cayenne and Parmesan cheese.


    Divide the mixture between each muffin tin to within 1/4 inch from the top.


    Bake 25-30 minutes or until golden brown.


    Cool 3 minutes then carefully run a knife around the quiches and lift out.


    Serve warm.


    These can also be baked in phyllo cups adjust the time.

    You do not really have to chill pie dough


    You don't really have to roll it flat either


    You can just press it into the pan


    The shell might be a tad tough


    but consider the liquid that must cook to jell (soggy bottoms ?) a thicker bottom would be no problem. .

    Do you mean the crust? I've used burrito-sized (10 inch) tortillas and it works wonderfully. A single one works fine, but if you want a little more substance, place one flat on the counter, sprinkle some shredded cheese over it and slide it into a warm oven just until the cheese melts (the melted cheese sticks the two tortillas together--go light on the cheese or it will be too heavy). Then, transfer the double-layer tortilla to a pie plate, fill with your quiche filling and bake. I usually use one plain flour tortilla, but you could use the vegetable ones if you want some color to the crust (spinach makes a green tortilla, and there's a red one, but I don't know what vegetable it is).





    EDIT: If you don't have a tortilla and can't get to the store, do you have any kind of crackers? If so, make a cracker crust (follow a recipe for a graham cracker crust, but omit the sugar). That should work fine.
    Similar but even better, this is fairly easy, a great party dish: goat cheese and leek galette.





    6 large leeks sliced thin


    3 tablespoons butter


    1 teaspoon fresh thyme chopped


    1/2 cup dry white wine


    1/2 cup heavy cream


    salt and pepper


    2 large egg beaten


    3 tablespoons flat leaf parsley chopped


    Pie Dough (use any typical unsweetened recipe)


    1/2 cup goat cheese softened





    In large skillet, saute the leeks, butter, thyme until somewhat tender. Add 1/2 cup water, and cook over low heat, stirring frequently, about 15 minutes. Raise the heat to moderate, add the wine, and cook until almost evaporated, about 5 minutes. Stir in the cream, and cook until reduced slightly, about 3 minutes. Season with salt and plenty of pepper. Let cool for 10 minutes.





    Beat 1 egg, stirring into leeks with two tablespoons of the parsley.


    Preheat the oven to 400F. On a slightly floured baking sheet without slides, roll out the Galette dough into a 14'; round. Don't roll too thin, you don't want the mixture to leak out of any holes.





    Spread the leek filling over the dough, leaving a two inch border. Crumble the goat cheese over the leeks. Fold up and pleat the border of the dough. Beat 1 egg, brush the dough with it. Brush well, this will help to seal against leaks.





    Bake the galette until the crust is golden, about 20 minutes. Set aside to cool for a few minutes. Scatter remaining 1 tablespoon parsley and serve warm.

    * 1 cup butter (2 sticks), cubed and chilled


    * 2 1/4 cups all-purpose flour


    * 1 teaspoon salt


    * 8 to 10 tablespoons ice water





    Put the butter, flour, and salt in the food processor, and pulse lightly just until the mixture resembles wet sand. Add the water, 1 tablespoon at a time, pulsing briefly after each spoonful of water. Keep adding water until the dough just begins to gather into larger clumps. Transfer equal amounts of the dough into 2 resealable plastic bags and pat each into a disk. Let rest in the refrigerator for at least 30 minutes. Remove 1 of the disks from the bag to a flour coated surface. Using a rolling pin, roll the dough out to a 10-inch round. Gently fit the rolled dough into a 9-inch pie pan, and refrigerate while you prepare the torte ingredients.





    Yield: 2 (9-inch) pie crusts





    EDIT Sorry, the chilling is what makes it flaky...no need to cook the crust first and bake at 375 till set in the center, test with knife. Depending on ingredients 30-45 minutes
    If you're going for really really quick, you can buy ready made pastry cases at most department stores.

    Ready made short crust pastry from the supermarket


    100g/4oz streaky bacon


    150ml/quarter pt milk


    150ml/quarter pt fresh single cream


    3 standard eggs, beaten


    large pinch grated nutmeg


    salt and pepper





    1. Roll out pastry. Use to line 20cm/8inch flan ring resting on lightly buttered baking tray.


    2. Cut bacon into strips. Fry lightly in its own fat until soft but not crispy.


    3. Drain thoroughly on kitchen paper. Use to line base of pastry case.


    4. Heat milk and cream to just below boiling point. Combine with beaten eggs.


    5. Season with grated nutmeg and salt and pepper to taste. Pour into pastry case.


    6. Bake in centre of moderately hot oven 200C/400F/gas6 for 10 minutes. Reduce temp. to moderate 160C/325F/gas 3. Bake for further 35-45 minutes ( or until set ).





    7. Serve hot.

    8. Bake at 375 for 25-30 mins - quiche is done when knife inserted in the center comes out clean.

    To reduce the calories/fat even more:


    - use reduced fat feta cheese


    - Don't use parm at all

    Made this recipe again last night and I made some slight changes/improvements that others might enjoy:


    -Pre-baked the crust for ~7-10 mins at 375


    -As suggested by some I added a little salt/pepper to egg mixture


    -Sauteed scallions with the mushrooms


    -Added ~1 c. of imitation crab/lobster meat chopped into relatively small pieces


    These alterations did a lot to improve the texture of the crust and overall flavor of the quiche only increased the calories by 15-20 cals / slice

    1/2 cup dry bread crumbs


    Sea salt and freshly ground black pepper, to taste

    The recipes here look great, These can be made in a microwave - just use a glass pie plate, spray it. Eat it after cooking. The time depends on the # of eggs %26amp; other items.
    You should be able to omit the pastry from any quiche recipe. Just bake in a well-greased pan. It will take a little less time to bake, so start checking on it early.





    The link below is for mini quiches with asparagus, ham and gruyere. I've made it a couple of times and it has become my favorite quiche filling. You could make it and bake it in a casserole dish without the pastry.

    1 10 fresh stalks asparagus, cooked


    5 eggs


    1 cup milk


    1 small onion, chopped

    I try to keep frozen pie crust around then when I'm not feeling creative in the kit. or short on time i thro in some leftover veggies and meat or fry some up,season and whip the eggs acording to what i put in and bake.


    This is good for a quick meal or to get hubby or kids to eat things they aren't fond of. Sometimes I fix a small one for myself cause I hate cooking for one when hubby is at work.

    Ingredients


    1 recipe favorite pie crust, fitted into a 9'; pie plate


    1 tablespoon unsalted butter


    1 cup onion, chopped


    1/4 lb. mushrooms, sliced


    coarse salt


    freshly ground black pepper


    1 teaspoon dried thyme


    1/2 teaspoon dry mustard, such as Colman's


    4 large eggs


    1 cup milk


    2 tablespoons flour


    1 cup [packed] grated Jarlsburg cheese


    paprika





    Method


    Preheat oven to 375.


    Melt the butter in a small pan and add the onions. Sauté over medium heat for a few minutes. When they begin to soften, add mushrooms, salt, pepper, thyme, and mustard.


    Sauté 5 minutes longer and remove from heat. Combine eggs, milk, and flour in a blender or food processor and beat well. Spread the grated cheese over the bottom of the prepared crust and spread the onion-mushroom mixture on top. Pour in the custard, and sprinkle the top with paprika.





    Bake 40 minutes or until solid in the center. Serve hot, warm, or at room temperature.





    For a hint of “hot”, add 1 teaspoon prepared horseradish and/or cayenne or Tabasco to the custard. Decorate the top with fresh sliced tomatoes before baking. Substitute other cheeses for the Swiss.

    It's really very easy. Either make or buy pie crust. If you buy it, get the kind that comes rolled or folded in the dairy section. Usually, it's Pillsbury brand. Cut out rounds of it and press them into a muffin tin, mini muffin tin if you want bite size appetizers. Then just use your favorite quiche recipe for normal size quiche and portion it out to fill the pie crust lined muffin cups 1/2-2/3 full and bake at 350 for about 10-20mins depending on muffin tin size.

    ya i'd try sam's or BJ's...the Nancy's brand is so so delicious. They make really tasty mushroom turnovers too (my husband is addicted to those things) seriously, not worth the trouble making when you can get them and they taste so good.

    Grease 24 miniature muffin cups. Divide each roll into halves and press into a muffin cup to make a shell. Distribute sausage, cheese and onion evenly in shells.

    Saute mushrooms and onions in a little of oil. Mix egg, milk, Bisquick, butter and cheese all together. Add onions and mushrooms. Grease small cup cake tins (silver stone coating) fill 3/4 full.


    Bake 20 minutes in 350 degree oven. Yields 5 dozen.

    I do not have time to type out my quiche recipe (and it looks like you already have a few here) but here is how you keep the bottom from becoming soggy....





    Line the unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450 for 5 minutes. Remove foil. Bake for 5 to 7 minutes more or till pastry is nearly done. Remove from the oven and reduce temp of oven to 325 (or whatever temp you decide to cook at). Pour egg mixture into HOT pastry shell.

    Chicken-Olive-Cheddar Quiche:





    1/2 (15-ounce) package refrigerated piecrusts


    2 cups chopped grilled chicken


    1 (8-ounce) can sliced mushrooms, drained


    2 to 3 green onions, chopped


    2 tablespoons sliced black olives


    1 garlic clove, minced


    2 tablespoons chopped fresh or 1 teaspoon dried basil


    1/4 teaspoon ground red pepper


    Vegetable cooking spray


    1 cup (4 ounces) shredded Cheddar cheese


    1 cup half-and-half


    4 large eggs


    1/4 teaspoon pepper





    Unfold piecrust, and place on a lightly floured surface. Roll out to 1/8-inch thickness. Carefully place piecrust in a 9-inch pieplate. Fold edges under, and crimp.





    Bake on lowest oven rack at 400掳 for 8 minutes. Cool.





    Saut茅 chicken and next 6 ingredients in a skillet coated with cooking spray over medium-high heat 5 minutes. Spoon mixture into prepared crust. Sprinkle with cheese.





    Whisk together half-and-half, eggs, and 1/4 teaspoon pepper. Pour over chicken mixture.





    Bake at 400掳 on lowest oven rack for 45 minutes or until set. Let stand 10 minutes.
    Ham And Cheese Quiche





    (8 servings)





    * 1 cup of chopped ham


    * 2 cups of light cream


    * 4 eggs


    * 1 cup or less of grated Cheddar cheese


    * 1 tsp flour


    * salt and pepper to taste


    * 1 deep dish pastry shell (prebake for 8 minutes at 400 F)





    Beat all 4 eggs together then add light cream, flour,salt and pepper, cheese and ham. Pour into pastry shell and bake in preheated at 375 degrees oven for 50 min. Enjoy!

    Ingredients


    For the pastry


    175g/6oz plain flour, plus extra for dusting


    salt


    75g/2戮oz butter, plus extra for greasing


    (alternatively use ready made pastry)


    For the filling


    250g/9oz English cheddar, grated


    4 tomatoes, sliced (optional)


    200g/7oz bacon, chopped


    5 eggs, beaten


    100ml/3陆fl oz milk


    200ml/7fl oz double cream


    salt


    freshly ground black pepper


    2 sprigs of fresh thyme











    Method


    1. To make the pastry, sift the flour together with a pinch of salt in a large bowl. Rub in the butter until you have a soft breadcrumb texture. Add enough cold water to make the crumb mixture come together to form a firm dough, and then rest it in the fridge for 30 minutes.


    2. Roll out the pastry on a light floured surface and line a 22cm/8陆inch well-buttered flan dish. Don't cut off the edges of the pastry yet. Chill again.


    3. Preheat the oven to 190C/375F/Gas 5.


    4. Remove the pastry case from the fridge and line the base of the pastry with baking parchment and then fill it with baking beans. Place on a baking tray and bake blind for 20 minutes. Remove the beans and parchment and return to the oven for another five minutes to cook the base


    5. Reduce the temperature of the oven to 160C/325F/Gas 3.


    6. Sprinkle the cheese into the pastry base and add the sliced tomatoes if you are using them. Fry the bacon pieces until crisp and sprinkle over them over the top.


    7. Combine the eggs with the milk and cream in a bowl and season well. Pour over the bacon and cheese. Sprinkle the thyme over the top and trim the edges of the pastry.


    8. Bake for 30-40 minutes or until set. Remove from the oven and allow to cool and set further.


    9. Trim the pastry edges to get a perfect edge and then serve in wedges.

    Ham and Apple Quiche





    Ingredients


    1 deep dish pie crust


    1 cup shredded cheddar cheese


    1 cup Monterey Jack cheese


    1 cup half and half


    4 eggs


    1 cup cubed ham


    2 large Granny Smith apples, skinned and sliced thin


    1 Tablespoon sugar (can substitute Sugar Twin or Sweet and Low)


    1/2 teaspoon cinnamon


    1 Tablespoon dry mustard powder


    1 Tablespoon Worcestershire sauce


    1/8 teaspoon garlic salt


    Place first layer with half the cheese, second layer ham, and third layer apples (add sugar and cinnamon to the top of apples). Top off with cheese that's left. Mix eggs and half and half (use blender to mix). Add dried mustard powder, Worcestershire sauce, and garlic salt to blended eggs. Pour in pie crust and cook for 45 to 55 minutes. Let stand 5 minutes before slicing.





    Healthy Ham Quiche





    Ingredients


    1 cup low-fat silken tofu


    1 cup low-fat vanilla soy milk


    1 cup liquid egg product


    3/4 cup nonfat ricotta cheese


    One 4-ounce can of mushrooms


    One 10-ounce bag no-fat shredded mozzarella cheese


    1 medium red bell pepper


    1 medium yellow or green pepper


    2 very mild jalapeno peppers (2/3 of a small can of Ortega roasted mild chilis)


    1 to 1-1/2 cup cubed or ground ham (may substitute 3/4 cup crumbled bacon or sausage)


    1/2 to 1 teaspoon hot curry


    1 Tablespoon chopped onions


    1 teaspoon granulated steak seasoning


    1/4 teaspoon garlic salt


    1/2 teaspoon cilantro


    2 baked, cooled pie crusts


    Blend the first 4 ingredients and the spices in blender. Chop peppers and ham in a food processor until the size of small peas. Drain in colander a few minutes. In the pie crusts, distribute the shredded cheese, mushrooms, ham, and peppers. Pour liquid from blender over it.





    Bake about 45 minutes at 350 degrees until knife inserted into pie comes out clean. Let set at least 15 minutes, then cut in wedges and serve. May be reheated in microwave for late-comers. Makes 2 pies.





    Hints: If you use frozen pre-made pie crusts, be sure to thaw first and poke holes around it before baking to prevent air bubbles; otherwise, it may come out soggy.





    Substitutions: For those with a wheat allergy, try our corn meal substitute: 3-1/4 cups cold water, 1 teaspoon salt, 1/2 teaspoon chili powder, and 1-3/4 cup corn meal (yellow or white).     1 cup (4 oz.) shredded sharp Cheddar cheese; divided


    2 tbsp. all-purpose flour; divided


    1/2 cup diced cooked ham


    2 tbsp. honey mustard


    5 eggs; beaten


    1 1/4 cups half-and-half


    1/4 cup green onions (scallions)


    1/4 tsp. salt





    Line a 9'; quiche dish with pastry; trim excess pastry around edges. Prick bottom and sides of pastry with fork. Bake at 400* - 5 minutes; remove from oven, and gently prick with a fork. Bake an additional 5 minutes.


    Combine Swiss cheese, 1/2 cup of the Cheddar and 1 tbsp. of the flour; toss gently. Sprinkle evenly in pastry shell. Combine ham and honey mustard; toss gently to coat. Spoon ham mixture over cheese.


    Combine eggs, half-and-half, green onions, remaining 1 tbsp. flour and salt; stir well. Pour mixture into pastry shell; top with remaining 1/2 cup Cheddar. Bake at 350* for 40-45 minutes or until set. Let stand 10 minutes before serving.

    1 can cheddar cheese soup


    1/2 c. light cream


    1 c. shredded cheddar cheese


    1/2 c. diced cooked ham


    1/2 c. cooked broccoli


    1 9'; unbaked piecrust





    In a bowl, hand beat (or medium setting on mixer) beat the eggs until fluffy. Add soup and cream; mix well. Sprinkle cheese, meat, and broccoli over unbaked pie crust. Follow with soup mix.





    Bake for 50 minutes at 350掳F.
    Hash Brown Quiche


    3 cups shredded hash brown potatoes


    1/3 cup butter, melted


    seasoning salt to taste


    1 cup diced cooked ham


    1/4 cup chopped onion


    1 cup shredded Cheddar cheese


    2 eggs


    1/2 cup milk


    salt and pepper to taste





    Preheat oven to 425 degrees F (220 degrees C). Press hash browns onto the bottom and sides of a 9 inch pie dish. Drizzle with melted butter, and sprinkle with seasoning salt. Bake in preheated oven for 20 minutes, or until beginning to brown. In a small bowl, combine ham, onion and shredded cheese. In a separate bowl, whisk together eggs, milk, salt, pepper, and a little seasoning salt. When crust is ready, spread ham mixture on the bottom, then cover with egg mixture. Reduce oven temperature to 350 degrees F (175 degrees C.) Bake in preheated oven for 20 to 25 minutes, or until filling is puffed and golden brown.
    HAM QUICHE





    6 oz. pkg. pork flavor Stove Top stuffing mix


    1 c. chopped cooked ham


    1 c. shredded Swiss cheese


    4 beaten eggs


    1 sm. (5 1/3 oz.) can evaporated milk





    Prepare stuffing mix according to directions on box. Press into quiche dish to form crust. Bake at 400 degrees for 10 minutes.


    Combine meat and cheese. In another bowl beat together eggs, milk, 1/8 tsp. pepper and salt to taste. Sprinkle meat and cheese into hot crust. Pour egg mixture over meat and cheese. Lower oven to 350 degrees. Bake 30-35 minutes or until center is set. Allow to cool 10 minutes before serving.
    Basic quiche: 6 large eggs, whisked in a bowl





    Add 1 pint half and half, 1 teaspoon dry mustard, 1 teaspoon season salt, 1 tablespoon Worchestershire sauce. Whisk vigorously with the eggs. Set aside.





    Lightly saute together 1 cup chopped ham, 1/4 cup chopped onions and 1/4 cup chopped green pepper in a small skillet. Saute until the mixture is slightly dry.





    Spread the ham and vegetable mixture in the bottom of an unbaked 9 or 10 inch pie crust. Add 1/2 cup grated sharp cheddar and 1 cup grated Swiss cheese. Rewhisk the egg mixture lightly and gently pour it over the ham and cheese. Bake at 325 for about 45-50 minutes, or until set. Serve with sliced Roma tomatoes and steamed, buttered asparagus.





    This basic egg/half and half ratio will make any kind of quiche. Just make sure that you cook the water out of mushrooms, ham, onions, etc. If not, the quiche will weep when you serve it.





    This formula also makes a good custard pie if you add 1 cup sugar, 1/2 stick butter, and flavoring instead of the savory ingredients.
