QUICHE LORRAINE
Pastry shell for 9 inch pan
12 slices (1/2 lb.) bacon, crisply fried %26amp; crumbled
1 c. shredded Swiss cheese (about 4 ounces)
1/3 c. minced onion, saute
3 eggs
1/2 tsp. salt
1 1/2 c. milk
1/4 tsp. sugar
Pinch of cayenne pepper (optional)
Heat oven to 425 degrees. Prepare pastry. Sprinkle bacon, cheese and onion in pastry lined pan. Beat eggs slightly and blend in remaining ingredients. Pour into pie pan. Bake 15 minutes then reduce oven temperature to 300 degrees and bake 30 minutes longer or until a knife inserted 1 inch from edge comes out clean. Let pie stand 10 minutes before cutting.Quiche Recipes?
Mexican Fiesta Quiche
5 large eggs
1/4 cup water
1/4 teaspoon garlic powder
1 1/4 cups yellow or white cornmeal
2 teaspoons chili powder
1 (15.5-ounce) can pinto beans
1 (4-ounce) can ORTEGA庐 Diced Green Chiles
1/2 cup chopped green onion
1/2 cup shredded Monterey Jack cheese
1 cup ORTEGA Salsa - Thick %26amp; Chunky (Medium)
Preheat oven to 375掳F (190掳C).
In a medium bowl beat together 1 egg, water and garlic powder. Stir in cornmeal until the mixture is crumbly. Press the cornmeal mixture onto the bottom and up the sides of a lightly greased 8-inch baking dish.
Beat together 4 eggs and chili powder until well blended. Stir in pinto beans, green chili peppers, green onions and shredded Monterey Jack cheese. Pour into the prepared crust.
Bake until puffed and the center is set, about 30-40 minutes. Drizzle with salsa. Let stand for 5 minutes before serving.
Makes 8 servings.
Easy Fieldcrest Quiche
Ingredients:
6 slices bacon, fried crisp and crumbled
1 cup shredded cheddar cheese
1/2 cup chopped onion
1/2 cup sliced mushrooms
1-3/4 cup milk
3/4 cup Bisquick baking mix
4 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
Place first 4 ingredients in quiche pan. Blend the remaining ingredients for 1 minute and pour in quiche pan. Bake at 350 degrees for 50 to 55 minutes. Allow to stand 5 to 10 minutes before serving.
You can change the types of cheese to give this quiche a different flair. Taco cheese recommended.
Cheesy Sausage Quiche
3/4 pound pork sausage
1/2 cup onion, chopped
1/3 cup green pepper, chopped
1 1/2 cup sharp cheddar cheese, grated
1 tablespoon flour
1 unbaked deep dish pie crust
4 eggs beaten
1 cup cream
1 tablespoon parsley flakes
3/4 teaspoon seasoned salt
1/4 teaspoon garlic salt
1/4 teaspoon pepper
Preheat oven to 375掳 F.
In a medium skilled fry sausage until cooked. Remove sausage, drain on paper towels. Reserve 2 tablespoons of sausage drippings and saute onions and green pepper in sausage drippings.
Combine cheese and flour. Stir in sausage, green pepper, and onion. Spread in pie crust shell. Mix remaining ingredients and pour into pie shell.
Bake on a cookie sheet, 35 to 40 minutes or until browned and filling is set.
Chicken Quiche:

1 (9 inch) pie shells, unbaked
3 eggs, beaten
1 1/2 cups milk
1/4 teaspoon salt
1/8 teaspoon pepper
1 dash ground nutmeg
3/4 cup chickens, chopped (previously cooked)
1 1/2 cups swiss cheese, grated (or cheddar, Monterey Jack or Havarti)
1 tablespoon flour
1. Prepare pastry shell.
2. Preheat oven to 325 degrees F.
3. In a bowl stir together eggs, milk, salt, pepper and nutmeg.
4. Add chicken.
5. Combine grated cheese and flour; add to egg mixture.
6. Mix well.
7. Pour egg mixture into hot pastry shell.
8. Bake at 325 degrees F for 35 to 40 minutes or until a knife inserted near the centre comes out clean.
9. Let stand for 10 minutes.

Hash Brown Quiche
3 cups frozen shredded hash browns, thawed and drained well
1/3 cup butter, melted
1 1/2 cups cooked ham, diced into very small pieces
1 1/2 cups shredded sharp cheddar cheese
2 eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
Preheat oven to 425 degrees F.
Presh hash browns between paper towels to be sure to get all moisture out.
Press into the bottom and up the sides of an ungreased, deep dish 9'; pie plate.
Drizzle butter over hash browns.
Bake for 25 minutes.
Meanwhile, combine the ham and cheese.
When the hash browns are browned, spread the ham and cheese mixture over the top.
Mix eggs, milk, salt and pepper and pour evenly over the ham and cheese mixture.
Reduce oven heat to 350 and bake the quiche for 25 to 30 minutes longer, or until knife inserted in center comes out clean.
Allow to stand for 10 minutes before cutting.
Hint: my family loved this with sauted garlic mushrooms served over the top of each slice, salsa would be good served over the top also.
Rochester Quiche
1 deep dish pie shell, prebaked
6 slices bacon
1 cup sliced mushrooms
1/2 cup onions, chopped
3 large eggs
1 cup half-and-half
1/8 teaspoon white pepper
3 tablespoons blue cheese, crumbled
1 1/2 cups swiss cheese, shredded
Preheat oven 425F degrees.
In skillet fry bacon til crispy, drain on paper towel.
Remove most fat from skillet then saute' mushrooms and onions til browned.
In bowl combine eggs, half and half, pepper.
Crumble bacon onto bottom of prepared pie shell.
Then add the onions and mushrooms.
Sprinkle crumbled blue cheese over all.
Top with the grated swiss cheese.
Pour egg mixture carefully over contents.
Bake at 425' for 15 minutes.
Reduce heat to 350' bake another 20-25 minutes til center is set and knife inserted in center comes out clean.
1 pie crust or pastry crust, parbaked
2 eggs
2 egg yolks
1 cup whole milk
1 cup heavy cream
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup cheese
Eggs Breakfast
Preheat oven to 375.
Fill parbaked shells and bake until set.
Use any fillings
Serve warm or at room temperature.
